Description

  • 1 cup all-purpose flour

  • 1 tablespoon granulated sugar

  • 1 teaspoon vanilla extract

  • 1 1/2 cups apples, peeled, cored, and diced (about 2 medium apples)

  • 2 tablespoons unsalted butter, melted

  • 1/4 cup brown sugar (for coating)

For the Glaze:

  • 1/2 cup powdered sugar

  • 1 tablespoon milk

  • 1/2 teaspoon vanilla extract


Instructions

1. Prepare the Apple Mixture

Start by preparing the apples. Peel, core, and dice the apples into small pieces, about 1/4-inch cubes. You can use any variety of apples, but sweet-tart apples like Granny Smith or Honeycrisp work particularly well for this recipe. Set the diced apples aside.

In a small pan, melt the butter over medium heat. Once melted, add the diced apples, and cook them for 3-4 minutes, stirring occasionally, until they soften slightly and begin to release their juices. Sprinkle the apples with a tablespoon of granulated sugar and stir to combine. Continue cooking the apples for another 2-3 minutes until they are tender but not mushy. Remove from heat and set aside to cool while you prepare the batter.

2. Make the Fritter Batter

In a large mixing bowl, whisk together the dry ingredients: flour, baking powder, salt, cinnamon, and nutmeg. These spices will bring out the warm, comforting flavors that are characteristic of apple fritters.

In a separate bowl, whisk together the wet ingredients: milk, egg, granulated sugar, and vanilla extract. Once well combined, add the wet ingredients to the dry ingredients, and stir until just combined. Be careful not to overmix, as this can make the fritter bites tough. The batter should be thick and scoopable but not too dense.

3. Add the Cooked Apples to the Batter

Once the cooked apples have cooled down slightly, gently fold them into the fritter batter. The apples should be evenly distributed throughout the batter, but be careful not to break them up too much as you stir. The pieces should remain somewhat intact to give your fritter bites a delicious apple-filled bite.

4. Heat the Oil for Frying

Use a slotted spoon or spider strainer to carefully remove the fritter bites from the oil and transfer them to a plate lined with paper towels to drain any excess oil.

6. Make the Glaze

While the fritter bites are cooling slightly, prepare the glaze. In a small mixing bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. The glaze should be thick enough to drizzle over the fritter bites, but if it’s too thin, add a little more powdered sugar to thicken it up. If it’s too thick, add a bit more milk until you achieve the desired consistency.

7. Glaze the Fritter Bites

Once the fritter bites are slightly cooled but still warm, drizzle the glaze over them. You can either dip each fritter bite into the glaze for a more uniform coating or drizzle it over the top for a more rustic look. Allow the glaze to set for a few minutes before serving.
