Description
Tender chicken thighs glazed with a sweet and tangy apricot sauce, creating a delicious balance of flavors. The sticky glaze caramelizes beautifully in the oven, giving the chicken a succulent, juicy texture with a hint of fruity sweetness.
Ingredients
For the Chicken Thighs:
- 4 bone-in, skin-on chicken thighs (or boneless, skinless if preferred)
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika (optional, for a smoky flavor)
For the Apricot Glaze:
- 1/2 cup apricot preserves
- 2 tbsp Dijon mustard
- 1 tbsp soy sauce
- 1 tbsp apple cider vinegar
- 1/2 tsp garlic powder
- 1/4 tsp ground ginger (optional)
- 1/4 tsp red pepper flakes (optional, for heat)
- Salt and pepper to taste
Instructions
1. Prepare the Chicken Thighs
Start by patting the chicken thighs dry with paper towels to remove any excess moisture. This step ensures the skin will crisp up nicely when cooked. Once dry, season both sides of the chicken thighs with salt, pepper, garlic powder, onion powder, and paprika (if using).
The seasoning will help enhance the flavor of the chicken while the glaze adds a delicious layer of sweetness and tang.
2. Cook the Chicken Thighs
In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, add the chicken thighs, skin-side down. Cook the chicken thighs for about 5-7 minutes, until the skin is golden brown and crispy. Flip the chicken thighs and cook for another 5-7 minutes on the other side.
If you’re using boneless, skinless chicken thighs, the cooking time will be slightly shorter. After both sides are browned, reduce the heat to medium and continue cooking the chicken for an additional 10-15 minutes, or until the internal temperature reaches 165°F (74°C). You can use a meat thermometer to check the temperature to ensure the chicken is cooked through.
3. Prepare the Apricot Glaze
While the chicken is cooking, prepare the apricot glaze. In a small saucepan, combine the apricot preserves, Dijon mustard, soy sauce, apple cider vinegar, garlic powder, ground ginger (if using), and red pepper flakes (if using). Stir the ingredients together and bring the mixture to a simmer over medium heat.
Let the glaze simmer for 5-7 minutes, stirring occasionally, until it thickens slightly and becomes glossy. Taste the glaze and adjust the seasoning by adding more salt, pepper, or vinegar if needed. If you prefer a spicier glaze, you can add more red pepper flakes to suit your taste.
4. Glaze the Chicken Thighs
Once the chicken thighs are fully cooked, remove them from the skillet and set them aside on a plate. Pour the apricot glaze into the skillet where the chicken was cooked, scraping up any browned bits from the bottom of the pan. This will add extra flavor to the glaze.
Return the chicken thighs to the skillet, skin-side up, and spoon the glaze over the chicken. Let the chicken cook in the glaze for an additional 5-7 minutes, allowing the flavors to meld and the glaze to caramelize on the chicken.
5. Serve the Apricot Glazed Chicken Thighs
Once the chicken is fully glazed and caramelized, remove it from the skillet and transfer it to a serving platter. Spoon any remaining glaze from the skillet over the top of the chicken for added flavor. Garnish with freshly chopped parsley or green onions for a pop of color and freshness.
Serve the Apricot Glazed Chicken Thighs with your favorite side dishes, such as roasted vegetables, mashed potatoes, rice, or a simple green salad.
