  • 1 lb chicken tenders
  • 1 cup raw cashews
  • 1/2 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • Salt and pepper to taste
  • 1 tablespoon olive oil or cooking spray

Instructions

  • Preheat the Oven:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
  • Prepare the Cashew Coating:
    • In a food processor, pulse the cashews until finely ground but not turned into powder. Transfer the ground cashews to a bowl.
    • Add the panko breadcrumbs and grated Parmesan cheese to the bowl with the cashews. Mix well.
  • Prepare the Chicken:
    • Pat the chicken tenders dry with paper towels. Season both sides with salt and pepper.
    • Set up a breading station: Place the flour in one shallow dish, the beaten eggs in another, and the cashew mixture in a third.
  • Bread the Chicken:
    • Dredge each chicken tender in flour, shaking off excess. Dip in the beaten eggs, then coat with the cashew mixture, pressing gently to adhere.
  • Bake:
    • Arrange the breaded chicken tenders on the prepared baking sheet. Lightly spray or brush the tenders with olive oil.
    • Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through and the coating is golden brown and crispy.
  • Serve:
    • Allow the chicken tenders to cool slightly before serving. Enjoy with your favorite dipping sauces!
