- 1 lb chicken tenders
- 1 cup raw cashews
- 1/2 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 cup all-purpose flour
- 2 large eggs
- Salt and pepper to taste

Instructions
- Preheat the Oven:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
- Prepare the Cashew Coating:
- In a food processor, pulse the cashews until finely ground but not turned into powder. Transfer the ground cashews to a bowl.
- Add the panko breadcrumbs and grated Parmesan cheese to the bowl with the cashews. Mix well.
- Prepare the Chicken:
- Pat the chicken tenders dry with paper towels. Season both sides with salt and pepper.
- Set up a breading station: Place the flour in one shallow dish, the beaten eggs in another, and the cashew mixture in a third.
- Bread the Chicken:
- Dredge each chicken tender in flour, shaking off excess. Dip in the beaten eggs, then coat with the cashew mixture, pressing gently to adhere.
- Bake:
- Arrange the breaded chicken tenders on the prepared baking sheet. Lightly spray or brush the tenders with olive oil.
- Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through and the coating is golden brown and crispy.
- Serve:
- Allow the chicken tenders to cool slightly before serving. Enjoy with your favorite dipping sauces!
