Ingredients

Scale

For the Meatballs:

  • 1 pound ground chicken (or turkey): The base for your meatballs, lean and flavorful.
  • 1/2 cup breadcrumbs: For binding and texture.
  • 1/4 cup grated Parmesan cheese: Adds a nice depth of flavor.
  • 1/4 cup chopped fresh cilantro: Brightens the meatballs with fresh flavor.
  • 1 egg: Binds the mixture together.
  • 1 teaspoon garlic powder: For that essential savory flavor.
  • 1 teaspoon ground ginger: Adds a warm spice that complements the curry.
  • Salt and pepper to taste: Essential for seasoning.

For the Coconut Curry Sauce:

  • 1 can (14 oz) coconut milk: The creamy base of the sauce that adds richness.
  • 2 tablespoons red curry paste: For a kick of flavor and spice.
  • 1 tablespoon soy sauce: Adds depth and umami.
  • 1 teaspoon lime juice: Brightens the sauce and balances the flavors.
  • 1 tablespoon honey or maple syrup: For a touch of sweetness.

Instructions

Step 1: Prepare the Meatball Mixture

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, cilantro, egg, garlic powder, ground ginger, salt, and pepper. Mix until well combined, but don’t overmix; you want to keep the meatballs tender.

This mixture will be the foundation for your flavorful meatballs, so be sure to mix just enough to combine the ingredients.

Step 2: Form the Meatballs

  1. Using your hands, form the mixture into golf ball-sized meatballs, about 1.5 inches in diameter. Place them on a lined baking sheet.

Don’t worry if they’re not perfect; the beauty of homemade meatballs is in their rustic charm!

Step 3: Bake the Meatballs

  1. Bake the meatballs in the preheated oven for about 20-25 minutes, or until they’re cooked through and golden brown. An internal temperature of 165°F (74°C) is ideal.

This step ensures that the meatballs are flavorful and juicy, with a nice crust on the outside.

Step 4: Make the Coconut Curry Sauce

  1. While the meatballs are baking, prepare the coconut curry sauce. In a medium saucepan over medium heat, combine the coconut milk, red curry paste, soy sauce, lime juice, and honey. Stir until the sauce is smooth and heated through, about 5 minutes.

This sauce will envelop your meatballs in creamy, spicy goodness!

Step 5: Combine and Serve

  1. Once the meatballs are done, remove them from the oven and add them to the saucepan with the coconut curry sauce. Gently stir to coat the meatballs in the sauce.
  2. Serve over rice or noodles, and garnish with additional cilantro if desired.
