Ingredients

- 2–3 scotch bonnet peppers (seeds removed for less heat, optional)
- 2 tablespoons fresh thyme leaves (or 1 tablespoon dried thyme)
- 1 tablespoon grated fresh ginger
- 2 tablespoons brown sugar
- 2 tablespoons soy sauce
- 2 tablespoons apple cider vinegar
- 2 tablespoons vegetable oil
- 1 tablespoon allspice (pimento)
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- Juice of 1 lime
- Zest of 1 lime

1. Prepare the Jerk Marinade
