Instructions
- Prepare the Mac and Cheese Mixture:
- In a large bowl, combine the cooked mac and cheese with the BBQ pulled beef. Mix until well combined. Season with salt and pepper to taste.
- Form the Bites:
- Using a tablespoon or small cookie scoop, shape the mac and cheese mixture into bite-sized balls. Place them on a baking sheet lined with parchment paper.
- Bread the Bites:
- Set up a breading station: Place the flour in one shallow dish, the beaten eggs in another, and the panko breadcrumbs mixed with grated Parmesan cheese in a third.
- Dredge each mac and cheese ball in flour, shaking off the excess. Dip into the beaten eggs, then coat evenly with the panko mixture. Return to the baking sheet.
- Fry the Bites:
- Heat about 2 inches of vegetable oil in a deep skillet or Dutch oven over medium heat until it reaches 350°F (175°C).
- Fry the mac and cheese bites in batches, turning occasionally, until golden brown and crispy, about 3-4 minutes per batch. Use a slotted spoon to transfer to a paper towel-lined plate to drain excess oil.
- Serve:
- Serve the BBQ pulled beef mac and cheese bites hot, with a side of BBQ sauce for dipping if desired.
