- 6 strips of bacon, chopped
- 4 large eggs
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 4 large flour tortillas
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: diced onions, bell peppers, or tomatoes for added flavor
Instructions
- Cook the Bacon:
- In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and drain on paper towels. Discard excess bacon fat, leaving about 1 tablespoon in the skillet.
- Cook the Beef:
- In the same skillet with the bacon drippings, add the ground beef. Cook until browned, breaking it apart with a spoon as it cooks. Drain any excess fat and season with salt and pepper.
- Cook the Eggs:
- In a separate skillet, heat the olive oil over medium heat. Scramble the eggs, cooking them until they are just set. Season with salt and pepper.
- Assemble the Burritos:
- Lay out the flour tortillas on a flat surface. Divide the cooked beef, bacon, scrambled eggs, and shredded cheeses evenly among the tortillas.
- Sprinkle cheese on top of the beef, bacon, and eggs, then roll up each tortilla tightly, folding in the sides to secure the filling.
- Cook the Burritos:
- Heat a clean skillet over medium heat. Place each burrito seam-side down and cook until golden brown and crispy, about 2-3 minutes per side.
- Serve:
- Slice the burritos in half and serve hot. Enjoy with your favorite salsa, sour cream, or avocado!
