Ingredients

  • 1 lb ground beef
  • 6 strips of bacon, chopped
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: diced onions, bell peppers, or tomatoes for added flavor

Instructions

  • Cook the Bacon:
    • In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and drain on paper towels. Discard excess bacon fat, leaving about 1 tablespoon in the skillet.
  • Cook the Beef:
    • In the same skillet with the bacon drippings, add the ground beef. Cook until browned, breaking it apart with a spoon as it cooks. Drain any excess fat and season with salt and pepper.
  • Cook the Eggs:
    • In a separate skillet, heat the olive oil over medium heat. Scramble the eggs, cooking them until they are just set. Season with salt and pepper.
  • Assemble the Burritos:
    • Lay out the flour tortillas on a flat surface. Divide the cooked beef, bacon, scrambled eggs, and shredded cheeses evenly among the tortillas.
    • Sprinkle cheese on top of the beef, bacon, and eggs, then roll up each tortilla tightly, folding in the sides to secure the filling.
  • Cook the Burritos:
    • Heat a clean skillet over medium heat. Place each burrito seam-side down and cook until golden brown and crispy, about 2-3 minutes per side.
  • Serve:
    • Slice the burritos in half and serve hot. Enjoy with your favorite salsa, sour cream, or avocado!
