- 1 lb (450g) ground beef
- 8 oz (225g) beef chorizo, casing removed and crumbled
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 can (12 oz) beer (lager or ale works well)
- 1 cup ketchup
- 2 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 2 tablespoons brown sugar
- 1 tablespoon Dijon mustard
- 1 teaspoon smoked paprika
- ½ teaspoon ground cumin
- Salt and pepper to taste
- Hamburger buns, for serving
- Pickles (optional, for garnish)

- Cook the Meat:

- In a large skillet or Dutch oven, cook the ground beef and crumbled chorizo over medium-high heat until browned and cooked through, breaking it up with a spoon as it cooks. Drain any excess fat.
- Sauté the Vegetables:
- Add the chopped onion, garlic, and red bell pepper to the skillet with the meat. Cook until the vegetables are softened, about 5 minutes.
- Add the Beer and Sauce Ingredients:
- Pour in the beer and stir to combine. Scrape up any browned bits from the bottom of the pan.
- Stir in the ketchup, tomato paste, Worcestershire sauce, brown sugar, Dijon mustard, smoked paprika, and ground cumin. Mix well and bring to a simmer.
- Simmer the Mixture:
- Reduce the heat to low and let the mixture simmer for 15-20 minutes, stirring occasionally, until the sauce has thickened and the flavors are well combined. Season with salt and pepper to taste.
- Serve:
- Spoon the beef chorizo mixture onto hamburger buns and serve hot. Optionally, top with pickles for extra crunch and flavor.
