  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 cup bell peppers, thinly sliced (any color)
  • 1 cup snow peas or snap peas, trimmed
  • 2 medium carrots, julienned or thinly sliced
  • 23 tablespoons soy sauce (or tamari for gluten-free version)
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce (optional, for added sweetness)
  • 1 teaspoon sesame oil (optional, for extra flavor)
  • 1/2 cup beef broth or water
  • 1 teaspoon sugar (optional, for sweetness)
  • 2 green onions, chopped, for garnish
  • Sesame seeds (optional, for garnish)

Instructions

1. Prepare the Noodles

Start by preparing the noodles. If you’re using dried chow mein or egg noodles, cook them according to the package instructions, typically boiling for 3-5 minutes until tender but still slightly firm to the bite. Fresh noodles may require less time, so be sure to follow the package directions. Once cooked, drain the noodles and set them aside.

To prevent the noodles from sticking together, you can drizzle them with a little sesame oil. If you’re using vegetables like bell peppers, carrots, or snow peas, slice them now into thin strips to match the size of the beef.

2. Prepare the Beef

Thinly slice the beef against the grain. Freezing the beef for 20 minutes before slicing can help you achieve paper-thin slices. Season the beef with a pinch of salt and pepper for extra flavor.

3. Stir-Fry the Beef

Heat 1 tablespoon of vegetable oil (or sesame oil) in a wok or large skillet over medium-high heat. Once the oil is hot, add the beef in batches, ensuring it doesn’t overcrowd the pan. Stir-fry the beef for about 2-3 minutes until browned and just cooked through. Remove the beef from the pan and set it aside.

4. Cook the Vegetables

In the same wok or skillet, add another tablespoon of oil if needed. Add the onion, garlic, and ginger and stir-fry for 1-2 minutes until fragrant. Then add the bell peppers, snow peas, and carrots. Stir-fry the vegetables for 3-4 minutes until they’re slightly tender but still crisp. The vegetables should remain vibrant and crunchy to add texture to the dish.

5. Prepare the Sauce

Add the soy sauce, oyster sauce, hoisin sauce (if using), sesame oil, and beef broth (or water) to the pan. Stir everything to combine and bring the sauce to a simmer. If you prefer a sweeter sauce, you can add a teaspoon of sugar. Let the sauce simmer for 2-3 minutes to meld the flavors and reduce slightly.

6. Combine the Noodles, Beef, and Sauce

Once the sauce has reduced slightly, add the cooked noodles and beef back into the pan. Toss everything together to coat the noodles and beef with the flavorful sauce. Continue stir-frying for another 2-3 minutes to heat everything through and allow the noodles to absorb the sauce.

If you want to make the dish more filling, you can add additional vegetables or proteins like chicken or tofu. This is a great time to add any optional toppings, such as a sprinkle of sesame seeds or additional green onions.

7. Garnish and Serve

Once the Beef Chow Mein is well combined and heated through, transfer it to serving plates. Garnish with freshly chopped green onions and a sprinkling of sesame seeds for an added crunch and flavor. Serve immediately while hot.
