Ingredients
For the Beef Noodles:
- 1 lb (450g) beef sirloin, flank steak, or ribeye, thinly sliced against the grain
- 8 oz (225g) noodles (egg noodles, rice noodles, or udon noodles)
- 2 tablespoons vegetable oil (or sesame oil for extra flavor)
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 tablespoons soy sauce (or tamari for gluten-free version)
- 1 tablespoon oyster sauce (optional, but adds depth of flavor)
- 1 tablespoon hoisin sauce (optional for a touch of sweetness)
- 1 teaspoon sesame oil (optional, for an added nutty flavor)
- 1 cup beef broth or water
- 1 teaspoon sugar (optional, to balance the flavors)
- 2 green onions, chopped, for garnish
- Optional vegetables: bell peppers, mushrooms, carrots, or spinach
Instructions
1. Prepare the Noodles
Start by cooking the noodles according to the package instructions. If you’re using egg noodles, rice noodles, or udon noodles, follow the recommended cooking time to ensure they are cooked to your desired texture. Once the noodles are cooked, drain them and set them aside. Drizzle a little sesame oil over the noodles if you want to prevent them from sticking and add a bit of flavor.
If you’re using vegetables such as bell peppers, carrots, or mushrooms, you can prepare them at this time by slicing them thinly.
2. Prepare the Beef
To ensure the beef is tender and easy to slice, it’s helpful to freeze it for about 15-20 minutes before slicing. This makes it easier to slice the beef thinly against the grain. Once sliced, season the beef with a pinch of salt and pepper to enhance its flavor.
3. Cook the Beef
Heat the vegetable oil (or sesame oil for extra flavor) in a large skillet or wok over medium-high heat. Once the oil is hot, add the beef to the pan. Avoid overcrowding the pan; cook the beef in batches if necessary. Stir-fry the beef for about 2-3 minutes, or until it’s browned and just cooked through.
Remove the beef from the pan and set it aside. If you’re using vegetables, you can quickly stir-fry them in the same pan until they’re tender-crisp. This step adds flavor and helps the vegetables soak up any beef juices left in the pan.
4. Prepare the Sauce
In the same skillet or wok, add a little more oil if necessary, and sauté the sliced onion, minced garlic, and ginger for about 2 minutes until the onion becomes soft and translucent. The ginger and garlic will release a fragrant aroma, enhancing the overall flavor of the dish.
Add the soy sauce, oyster sauce, hoisin sauce (if using), sesame oil, and beef broth (or water). Stir well to combine the ingredients and bring the sauce to a simmer. If you prefer a sweeter sauce, you can add a teaspoon of sugar to balance out the savory flavors.
Let the sauce simmer for 3-4 minutes, allowing it to reduce slightly and thicken. If you’d like the sauce to be more intense, you can let it simmer for a few extra minutes to concentrate the flavors.
5. Combine the Noodles, Beef, and Sauce
Once the sauce has thickened to your liking, add the cooked noodles and beef back into the pan. Toss everything together, ensuring the noodles and beef are well coated with the sauce. Continue to cook for an additional 2-3 minutes, allowing the flavors to meld together and the noodles to soak up the savory sauce.
If you’re adding vegetables like bell peppers, mushrooms, or spinach, add them now and stir to combine. Let the vegetables cook in the sauce for a few minutes until they are tender but still crisp.
6. Garnish and Serve
Once everything is well combined, transfer the Beef Noodles to a serving platter. Garnish with freshly chopped green onions for a burst of freshness and color. Serve the dish immediately while it’s still warm.
