  • 1 tablespoon salsa or hot sauce (optional)
  • 1 tablespoon fresh cilantro, chopped (optional for garnish)

For the Wrap:

  • 4 large flour tortillas (burrito size)
  • 1 tablespoon butter (for toasting, optional)

Instructions

1. Prepare the Ingredients

Start by preparing all of your ingredients so that you can assemble the burritos quickly. Dice the onion, bell pepper, and garlic. If you’re using cooked sausage or bacon, crumble it into small pieces. Shred the cheese and set aside. You can also have your salsa and cilantro ready for when it’s time to garnish.

2. Cook the Veggies and Meat

In a large skillet, heat 1 tablespoon of butter or olive oil over medium heat. Add the diced onion and bell pepper to the pan, sautéing them for 3-4 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant.

If you’re using breakfast sausage or bacon, add it to the pan now, allowing it to brown and crisp up. Stir occasionally to ensure the meat is evenly cooked. Once everything is cooked through, remove the mixture from the pan and set it aside.

3. Scramble the Eggs

In a medium bowl, crack the eggs and whisk them until the yolks and whites are fully combined. Season with a pinch of salt and pepper. In the same skillet, add a little more butter or oil, and heat over medium-low. Pour the beaten eggs into the skillet and cook gently, stirring occasionally. Scramble the eggs until they are just set and slightly creamy, which should take 2-3 minutes. Be careful not to overcook the eggs—soft and slightly runny is ideal for a perfect breakfast burrito.

4. Assemble the Burritos

Once the eggs are scrambled and the veggie/meat mixture is ready, it’s time to assemble the burritos. Lay the flour tortillas flat on a clean surface. If you like your tortillas toasted, you can warm them in a skillet with a small amount of butter until lightly golden. This step adds a nice crunch to the burrito but is optional.

Place about 1/4 of the scrambled eggs in the center of each tortilla, followed by a spoonful of the sautéed veggie/meat mixture. Sprinkle a generous amount of shredded cheese over the filling, allowing it to melt into the warm ingredients.

5. Roll the Burrito

To roll the burrito, fold in the sides of the tortilla over the filling. Then, start rolling it from the bottom, making sure the filling is tightly wrapped inside the tortilla. Once the burrito is rolled up, you can give it a quick toast in the skillet if you’d like to seal the edges and crisp up the outside.

6. Serve and Garnish

After rolling all of the burritos, cut them in half for easier serving. Garnish with fresh cilantro, a drizzle of salsa, or hot sauce for extra flavor. Serve immediately while they’re warm and enjoy your delicious homemade Breakfast Burritos.
