Description

This Broccoli and Mushroom Stir Fry is a quick and healthy dish, featuring crisp broccoli and earthy mushrooms, stir-fried in a savory sauce. Light, nutritious, and full of flavor, it’s a perfect dish for busy weeknights.

Ingredients

Scale

For the Broccoli and Mushroom Stir Fry:

  • 1 large head of broccoli, cut into florets
  • 8 oz (225 g) mushrooms, sliced (button mushrooms or any variety of your choice)
  • 2 tablespoons olive oil or vegetable oil
  • 2 cloves garlic, minced
  • 1-inch piece of fresh ginger, minced or grated
  • 2 tablespoons soy sauce (low-sodium for a healthier option)
  • 1 tablespoon oyster sauce (or use a vegetarian mushroom-based alternative)
  • 1 tablespoon hoisin sauce (optional for sweetness)
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar (optional for tang)
  • ½ teaspoon red pepper flakes or chili paste (optional for heat)
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)
  • Chopped green onions for garnish (optional)

Instructions

1. Prepare the Vegetables

Start by preparing your vegetables. Wash the broccoli thoroughly and cut it into florets, making sure they are similar in size to ensure even cooking. Slice the mushrooms thinly. If you’re using a variety of mushrooms like cremini or shiitake, you can slice them into bite-sized pieces.

Mince the garlic and ginger, ensuring the pieces are small enough to release their flavors quickly during stir-frying.

2. Prepare the Stir Fry Sauce

In a small bowl, combine the soy sauce, oyster sauce, hoisin sauce (if using), sesame oil, rice vinegar (if using), and red pepper flakes or chili paste (if you want some heat). Stir well to combine. Taste the sauce and adjust the seasoning as needed—add a little more soy sauce for saltiness or hoisin sauce for sweetness. Set the sauce aside.

3. Heat the Oil

Place your wok or large skillet over medium-high heat and add the olive oil or vegetable oil. Let the oil heat up for about 1-2 minutes. You want the oil to be hot but not smoking, as this will help cook the vegetables quickly without burning them.

4. Sauté the Garlic and Ginger

Once the oil is hot, add the minced garlic and ginger to the pan. Stir-fry for about 30 seconds until the garlic becomes fragrant. Be careful not to burn the garlic, as it can become bitter.

5. Cook the Broccoli

Add the broccoli florets to the pan and stir well. Cook for 3-5 minutes, stirring occasionally, until the broccoli begins to soften but still retains its bright green color and slight crunch. If you prefer your broccoli more tender, you can cook it for a couple of extra minutes.

6. Add the Mushrooms

Add the sliced mushrooms to the pan and stir to combine with the broccoli. Continue cooking for an additional 5-7 minutes, until the mushrooms release their moisture and shrink down, becoming tender. Stir occasionally to ensure even cooking.

7. Add the Stir Fry Sauce

Once the vegetables are cooked to your liking, pour the prepared stir fry sauce over the broccoli and mushrooms. Stir everything together to coat the vegetables evenly in the sauce. Let the sauce simmer for an additional 1-2 minutes, allowing the flavors to meld and the sauce to thicken slightly.

8. Season and Serve

Taste the stir fry and adjust the seasoning with a pinch of salt and pepper if needed. Once the sauce has thickened to your desired consistency, remove the stir fry from the heat.

Transfer the stir fry to a serving dish and garnish with sesame seeds and chopped green onions, if desired. Serve hot with steamed rice or noodles for a complete meal.
