Instructions
1. Cook and Shred the Chicken
Start by cooking the chicken if you haven’t already. You can use rotisserie chicken for convenience, or cook chicken breasts or thighs and shred them. To cook the chicken yourself, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chicken and cook it until it’s no longer pink inside, about 6-7 minutes per side, depending on the thickness. Once the chicken is cooked, shred it using two forks or chop it into bite-sized pieces.
If you’re using rotisserie chicken, simply shred it with your fingers or a fork until it’s in bite-sized pieces. You’ll need about 2 cups of shredded chicken for the dip.
2. Prepare the Dip Base
In a medium-sized mixing bowl, combine the softened cream cheese, ranch dressing (or blue cheese dressing if you prefer), and buffalo sauce. Use a spatula or whisk to mix these ingredients together until smooth and well-combined.
