For the Burger Bowls:

  • 1 lb (450g) ground beef (80% lean)
  • 4 cups mixed greens (lettuce, arugula, spinach, or your preferred greens)
  • 1 medium tomato, sliced
  • 1 small red onion, thinly sliced
  • 1 avocado, sliced
  • 4 slices cheese (cheddar, Swiss, or your choice)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil (for grilling)

For the Caramelized Onion Aioli:

 

  • 1 large onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar (or white wine vinegar)
  • Salt and pepper, to taste

Instructions

1. Make the Caramelized Onion Aioli

Start by caramelizing the onions for the aioli. Heat the olive oil and butter in a large skillet over medium heat. Add the thinly sliced onion and cook, stirring occasionally, for about 15-20 minutes, until the onions are soft, golden, and caramelized. This slow cooking process brings out the natural sweetness of the onions.

Add the minced garlic to the onions and cook for an additional 1-2 minutes, until fragrant. Remove the skillet from heat and allow the onion mixture to cool slightly.

In a mixing bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, and the caramelized onion mixture. Stir well to combine, then season with salt and pepper to taste. Set the aioli aside.

2. Prepare the Burger Patties

While the onions are caramelizing, prepare the burger patties. In a bowl, season the ground beef with salt and pepper to taste. Mix gently, being careful not to overwork the meat, which can lead to tough burgers.

Divide the seasoned beef into 4 equal portions and shape each portion into a patty about 3/4-inch thick. Make a small indentation in the center of each patty with your thumb to prevent them from puffing up while cooking.

3. Grill the Burger Patties

Preheat your grill or grill pan over medium-high heat. Lightly oil the grill grates or the grill pan with olive oil to prevent the patties from sticking.

Place the patties on the hot grill and cook for 4-5 minutes per side for medium doneness, or longer if you prefer them well-done. Add a slice of cheese on top of each patty during the last minute of cooking, allowing it to melt.

Once the burgers are cooked to your desired doneness, remove them from the grill and set them aside to rest for a few minutes.

4. Assemble the Burger Bowls

To assemble the burger bowls, start by arranging a bed of mixed greens in each bowl. Top with slices of tomato, red onion, and avocado. These fresh toppings will add a light, crisp contrast to the rich burger patties and creamy aioli.
