These gooey, fudgy brownies are taken to the next level with the addition of colorful Cadbury Mini Eggs. The crispy candy shell and creamy chocolate center create a perfect bite that adds a fun Easter twist to a classic favorite.
Ingredients
For the Brownies:

Instructions
Start by preheating your oven to 350°F (175°C). While the oven is heating, line a 9×9-inch square baking pan with parchment paper. You can lightly grease the pan if you prefer, but the parchment paper will ensure the brownies are easy to remove once they’re baked.
In a large mixing bowl, combine the melted butter and granulated sugar. Use an electric mixer or a whisk to beat them together until the mixture is smooth and creamy. This step helps dissolve the sugar into the butter, creating a smooth base for your brownie batter.
Once the butter and sugar are fully combined, add the eggs one at a time, beating well after each addition. Add the vanilla extract and mix until everything is incorporated. The eggs and vanilla will add richness and flavor to the batter.
In a separate bowl, whisk together the all-purpose flour, cocoa powder, salt, and baking powder. Once the dry ingredients are well mixed, gradually add them to the wet ingredients, stirring until everything is fully combined. The batter will be thick but smooth.
Gently fold the chopped Cadbury Mini Eggs into the batter, making sure they are evenly distributed throughout. If you’re adding chocolate chips for extra richness, fold them in at this stage as well. This will ensure that the chocolate chips and Mini Eggs are spread evenly throughout the batter, adding bursts of chocolate in every bite.
Pour the brownie batter into the prepared baking pan and use a spatula to spread it evenly. Make sure the batter is level to ensure that the brownies bake evenly.
Once the batter is spread evenly in the pan, sprinkle the whole Cadbury Mini Eggs over the top of the brownies. These eggs will bake into the top layer, giving the brownies a colorful and festive appearance. You can press them down gently into the batter to ensure they stay in place while baking.
Place the baking pan in the preheated oven and bake for 40-45 minutes, or until a toothpick inserted into the center of the brownies comes out with only a few moist crumbs attached. The top of the brownies should be firm, and the edges should slightly pull away from the sides of the pan.
If you prefer a fudgier brownie, check the brownies at 40 minutes and remove them once the toothpick comes out with a few moist crumbs. If you like your brownies a bit more set, leave them in for the full 45 minutes.
Once the brownies are done baking, remove them from the oven and allow them to cool in the pan for about 10 minutes. After that, transfer the brownies to a wire rack to cool completely. Cooling the brownies on a wire rack allows air to circulate around them, helping them set properly and preventing them from becoming soggy.
Once the brownies have cooled, use a sharp knife to cut them into 16 squares. The brownies should be soft, gooey in the center, and filled with pockets of melted chocolate and crunchy Mini Eggs.
Serve the brownies as a dessert at a party, share them with friends and family, or keep them for yourself to enjoy throughout the week. Either way, they are sure to be a hit!
