Instructions

While the pasta cooks, wash and grate or spiralize the carrots. If you prefer a finer texture, you can use a food processor. This step will help the carrots cook quickly and blend well with the pasta.
STEP 3: SAUTÉ GARLIC AND CARROTS
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant. Be careful not to burn it. Next, add the grated or spiralized carrots to the skillet, cooking for about 3–4 minutes until they begin to soften.
STEP 4: ADD BROTH AND SEASONINGS
Pour in the vegetable or chicken broth, and add the fresh thyme or basil. Season with salt and pepper to taste. Stir the mixture to combine, allowing it to simmer for an additional 2–3 minutes until the carrots are tender and the flavors meld together.
STEP 5: COMBINE PASTA AND CARROT MIXTURE
Add the cooked pasta to the skillet, tossing it with the carrot mixture. If the pasta seems dry, add a splash of the reserved pasta water to loosen it up. Mix until everything is evenly coated.
