- 1/2 cup whole milk (or heavy cream for extra creaminess)
- 1/4 cup sour cream (optional, for extra tanginess)
- Salt to taste
- Freshly ground black pepper to taste
- Fresh chives (optional, for garnish)
- 1/4 cup grated Parmesan cheese (optional, for extra cheesiness)
- 2 cloves garlic, minced (optional, for added garlic flavor)
Instructions
1. Prepare the Potatoes
The first step in making Cheesy Boursin Mashed Potatoes is to prepare your potatoes. Begin by peeling the potatoes (if you prefer) and cutting them into even chunks, about 1-2 inches in size. Yukon Gold potatoes are an excellent choice because they are naturally creamy and hold their shape well when mashed. However, you can also use Russet potatoes if you prefer a fluffier texture.
Place the cut potatoes into a large pot and cover them with cold water. Add a pinch of salt to the water to help season the potatoes as they cook. Bring the water to a boil over medium-high heat. Once it’s boiling, reduce the heat to a simmer and cook the potatoes for 15-20 minutes, or until they are fork-tender. You can test their tenderness by inserting a fork into a potato chunk — it should easily slide through.
2. Drain and Mash the Potatoes
Once the potatoes are tender, carefully drain them in a colander and return them to the pot. Let them sit for a minute to allow any excess moisture to evaporate. This will help ensure your mashed potatoes don’t become too watery.
Now, it’s time to mash the potatoes. You can use a potato masher for a more rustic texture, or a potato ricer for ultra-smooth mashed potatoes. Mash the potatoes until they reach your desired consistency. If you prefer extra creamy mashed potatoes, use a hand mixer or stand mixer to whip them until smooth and fluffy.
3. Add the Boursin Cheese
Now comes the best part — adding the Boursin cheese. Cut the Boursin cheese into small pieces and add it to the hot, mashed potatoes. The heat from the potatoes will help melt the cheese and incorporate it evenly into the mash. Stir until the cheese is completely melted and the potatoes are rich and creamy.
If you want an extra cheesy kick, you can also add grated Parmesan cheese at this stage for a boost of savory flavor.
4. Add Butter, Milk, and Sour Cream
To make the mashed potatoes even creamier and more indulgent, add the butter, milk (or heavy cream), and sour cream (if using). Start with 1/2 cup of milk, and add more as needed to achieve the desired consistency. You can also substitute the milk for half-and-half or heavy cream for a richer texture.
Mix everything together until smooth and creamy. The butter will add richness, the milk will give the potatoes a silky texture, and the sour cream will add a slight tang that balances the richness of the cheese.
5. Season the Potatoes
Once the mashed potatoes are creamy and flavorful, it’s time to season them. Taste the potatoes and add salt and freshly ground black pepper to your liking. Keep in mind that the Boursin cheese is already seasoned, so you may not need as much salt. If you like a little extra garlic flavor, you can add minced garlic at this stage. Simply stir it into the hot potatoes, allowing the heat to release the flavors of the garlic.
6. Serve and Garnish
Once the potatoes are perfectly seasoned and creamy, transfer them to a serving dish. Garnish with fresh chopped chives for a burst of color and an added layer of flavor. If you’re a fan of extra cheese, you can sprinkle more grated Parmesan on top or even add crumbled bacon for a savory crunch.
Serve these Cheesy Boursin Mashed Potatoes alongside your favorite main dishes, like roast chicken, steak, or pork. They also pair wonderfully with a variety of vegetables, making them the perfect side dish for any meal.
