For the Cheesy Chicken Garlic Bread Sandwich:

  • 4 boneless, skinless chicken breasts (or thighs, if preferred)

  • 4 slices of thick-cut garlic bread (store-bought or homemade)

  • 4 slices of your favorite cheese (cheddar, mozzarella, or provolone are all great options)

  • 2 tablespoons olive oil (for cooking the chicken)

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1/2 teaspoon paprika

  • 1/2 teaspoon dried oregano

  • Salt and pepper to taste

  • 1 tablespoon butter (for spreading on the garlic bread)

  • Fresh parsley, chopped (for garnish)

  • Optional: Lettuce, tomato slices, or pickles for extra toppings

For the Garlic Bread (if making homemade):

  • 1 loaf of Italian bread or baguette

  • 1/2 cup (1 stick) unsalted butter, softened

  • 4 cloves garlic, minced

  • 1 tablespoon fresh parsley, chopped

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper


Instructions

1. Prepare the Chicken

Start by seasoning the chicken breasts (or thighs) with garlic powder, onion powder, paprika, dried oregano, salt, and pepper. Rub the spices into the chicken to ensure an even coating.

Heat 2 tablespoons of olive oil in a cast iron skillet or frying pan over medium-high heat. Once the oil is hot, add the chicken and cook for 6-7 minutes per side (depending on thickness) until the chicken reaches an internal temperature of 165°F (75°C) and is golden brown on the outside.

Once the chicken is cooked, remove it from the skillet and let it rest for 5 minutes. This will help retain the juices, making the chicken tender and moist. After resting, slice the chicken into thin strips or bite-sized pieces to fit comfortably inside the sandwich.

2. Prepare the Garlic Bread (if making from scratch)

While the chicken is cooking, you can prepare the garlic bread. Preheat your oven to 375°F (190°C). Slice the loaf of Italian bread or baguette into thick slices.

In a small bowl, mix the softened butter, minced garlic, chopped parsley, salt, and pepper. Spread the garlic butter mixture generously on each slice of bread.

Place the prepared bread slices on a baking sheet and bake in the preheated oven for 8-10 minutes or until the edges are crispy and golden. You can also broil the bread for 1-2 minutes at the end to achieve a more golden, crunchy texture.

If you’re using store-bought garlic bread, simply toast it according to the package instructions or until it’s golden and crispy.

3. Assemble the Sandwiches

Once the chicken is sliced and the garlic bread is ready, it’s time to assemble the sandwiches. Start by spreading a little butter on the inside of each slice of garlic bread to enhance the flavor and crispiness.

Place a slice of cheese on the bottom piece of garlic bread. You can choose your favorite cheese—cheddar, mozzarella, or provolone are all great options.

Add a generous portion of the sliced chicken on top of the cheese, then place another slice of cheese on top of the chicken. The cheese will help bind everything together and melt into the sandwich as it cooks.

Top with the second slice of garlic bread. You can optionally add lettuce, tomato, or pickles if you prefer more toppings, but the classic cheesy chicken and garlic bread combo is just as satisfying.

4. Grill the Sandwiches

Heat a large skillet or pan over medium heat. Place the assembled sandwiches in the pan and cook for 3-4 minutes on each side or until the garlic bread is golden brown and crispy, and the cheese has fully melted.

You can also use a panini press if you have one, which will give the sandwiches even more crispy texture and grill marks.

Once the sandwiches are grilled to perfection, remove them from the pan and allow them to cool slightly before cutting.

5. Serve the Sandwiches

 

Slice the Cheesy Chicken Garlic Bread Sandwiches in half diagonally or in thirds for smaller portions. Serve them with a side of fries, a fresh salad, or your favorite dipping sauce. Garnish with chopped parsley for an extra burst of color and flavor.
