Ingredients
For the Chicken Avocado Melt Sandwich:

Instructions
Start by seasoning the chicken breasts with salt and pepper on both sides. If you prefer, you can marinate the chicken for 30 minutes to an hour with olive oil, lemon juice, garlic, or your favorite seasoning to enhance the flavor. However, if you’re short on time, simple salt and pepper will work just fine.
Heat 2 tablespoons of olive oil in a grill pan or skillet over medium heat. Once the oil is hot, place the chicken breasts in the pan and cook for about 5-6 minutes on each side until they are golden brown and cooked through. The internal temperature of the chicken should reach 165°F (74°C).
Once the chicken is fully cooked, remove it from the pan and let it rest for a few minutes. After resting, slice the chicken into thin, even strips or small pieces, depending on your preference for sandwich fillings.
While the chicken is cooking, take the slices of bread and butter one side of each slice. You can use regular butter, margarine, or a butter alternative. The buttered side will be toasted in the pan for a crispy, golden finish.
In the same skillet or grill pan used for the chicken, reduce the heat to medium-low. Place the buttered slices of bread in the pan and toast for about 2-3 minutes per side, or until they are golden brown and crispy. Keep an eye on them to avoid burning.
If you prefer to use a toaster, you can toast the bread slices separately, but toasting them in the pan with the chicken’s residual oil adds extra flavor.
While the chicken and bread are being prepared, cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado lightly with a fork, leaving it a little chunky for texture. Season with a pinch of salt and pepper. For extra creaminess, you can add a tablespoon of mayonnaise or Dijon mustard to the mashed avocado and mix it well.
Once the chicken is cooked, sliced, and the bread is toasted, it’s time to assemble the sandwich. On one slice of the toasted bread, spread the mashed avocado mixture generously, making sure to cover the entire surface. On top of the avocado, layer the sliced chicken evenly.
Next, add a slice of cheese on top of the chicken. You can use cheddar, provolone, or mozzarella, depending on your preference. If you like your cheese extra melty, you can place the sandwich in a warm oven (around 350°F or 175°C) for a few minutes to help the cheese melt before serving.
If you’re adding extras like lettuce, spinach, or sliced tomatoes, layer them on top of the cheese. The freshness of the vegetables adds a nice contrast to the rich, creamy avocado and savory chicken.
Place the second slice of toasted bread on top to complete the sandwich.
Once the sandwich is assembled, slice it in half diagonally or down the center, depending on your preference. Serve immediately while the cheese is melted and the sandwich is warm. Pair the sandwich with your favorite side, like a salad, chips, or a bowl of soup.
