Ingredients

  • 8 oz (about 2 cups) rotini or penne pasta
  • 2 cups cooked, grilled chicken breast, diced
  • 4 cups chopped romaine lettuce
  • ½ cup Caesar dressing (store-bought or homemade)
  • ¼ cup grated Parmesan cheese
  • ¼ cup croutons (store-bought or homemade)
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced (optional)
  • Salt and pepper to taste

Instructions

  • Cook the Pasta:
    • Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.
  • Prepare the Chicken:
    • If not using pre-cooked chicken, season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and cook chicken until fully cooked and no longer pink inside, about 6-8 minutes per side. Let cool, then dice into bite-sized pieces.
  • Mix the Dressing:
    • In a small bowl, combine Caesar dressing with lemon juice and minced garlic (if using). Mix well.
  • Combine Ingredients:
    • In a large bowl, toss the cooked pasta, diced chicken, and chopped romaine lettuce. Drizzle with the Caesar dressing mixture and toss to coat evenly.
  • Add Toppings:
    • Sprinkle grated Parmesan cheese and croutons over the top. Toss gently to combine.
  • Serve:
    • Serve immediately or refrigerate for up to 2 hours to allow the flavors to meld. Enjoy!
