For Chicken Gloria:

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)

  • 2 tablespoons olive oil (for cooking)

  • 1 tablespoon butter

  • 1 medium onion, finely chopped

  • 2 cloves garlic, minced

  • 1 cup sliced mushrooms (cremini or button mushrooms work well)

  • 1/2 cup dry white wine (such as Sauvignon Blanc)

  • 1 cup heavy cream

  • 1/4 cup chicken broth

  • 1 teaspoon dried thyme

  • Salt and freshly ground black pepper, to taste

  • Fresh parsley, chopped (for garnish)


Instructions

1. Prepare the Chicken

Start by seasoning both sides of the chicken breasts with salt and pepper. This simple seasoning enhances the natural flavor of the chicken, setting the stage for the creamy sauce to shine. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken breasts and cook for about 5-6 minutes per side, until they are golden brown and cooked through. The chicken should reach an internal temperature of 165°F (74°C). Once the chicken is cooked, transfer it to a plate and set aside.

2. Sauté the Vegetables

In the same skillet, reduce the heat to medium and add 1 tablespoon of butter. Add the finely chopped onion and sauté for about 2-3 minutes until the onion becomes translucent. Then, add the minced garlic and sliced mushrooms. Cook for another 3-4 minutes, stirring occasionally, until the mushrooms soften and begin to release their moisture. The mixture should become fragrant, and the mushrooms should have a nice golden-brown color.

3. Deglaze the Pan

Once the vegetables are sautéed, pour in the white wine, scraping up any browned bits from the bottom of the skillet using a wooden spoon. These browned bits, known as fond, are packed with flavor and will add depth to the sauce. Let the wine simmer for 2-3 minutes, allowing the alcohol to cook off and the sauce to reduce slightly.

4. Make the Sauce

After the wine has reduced, add the chicken broth, heavy cream, and dried thyme to the skillet. Stir everything together and bring the mixture to a simmer. Let the sauce cook for 5-7 minutes, stirring occasionally, until it thickens slightly. Taste the sauce and adjust the seasoning with salt and freshly ground black pepper as needed.

5. Return the Chicken to the Pan

Once the sauce has thickened and is flavorful, return the cooked chicken breasts to the skillet. Spoon some of the sauce over the chicken to coat it. Let the chicken simmer in the sauce for an additional 5 minutes, allowing it to reheat and absorb some of the sauce’s flavors. The sauce will continue to thicken, creating a rich, creamy base that pairs perfectly with the chicken.

6. Garnish and Serve

 

Once the chicken is heated through and coated with the luscious sauce, remove the skillet from the heat. Garnish the Chicken Gloria with freshly chopped parsley for a pop of color and added freshness. Serve the chicken alongside your favorite sides, such as mashed potatoes, rice, or steamed vegetables. The creamy sauce will complement the side dishes beautifully, making this an unforgettable meal.
