Description
A refreshing and creamy breakfast option, this bowl features smooth ricotta cheese paired with fresh citrus fruits, honey, and a sprinkle of granola for crunch. It’s a bright, light start to your morning!
Ingredients
For the Citrus Ricotta Breakfast Bowl:
- 1 cup ricotta cheese (whole milk or part-skim)
- 1 large orange (or 2 smaller oranges)
- 1 grapefruit (optional, for added citrus flavor)
- 1 tablespoon honey or maple syrup (optional)
- 1 teaspoon vanilla extract
- ¼ cup granola (optional, for crunch)
- 2 tablespoons chopped nuts (such as almonds, pistachios, or walnuts, optional)
- Fresh mint leaves (optional, for garnish)
Instructions
Start by prepping the citrus fruits. Using a sharp knife, peel the orange and grapefruit (if using) to remove the outer skin. Once peeled, segment the citrus fruits by cutting between the membranes of each section to release the juicy segments. Collect the segments in a bowl. If you prefer, you can also cut the citrus into small wedges or slices, but segments work best for creating a smooth texture in the bowl.
You can also squeeze the remaining juice from the membranes and add it to the bowl for extra flavor.
In a separate small bowl, scoop the ricotta cheese. If you prefer a slightly sweeter bowl, you can add 1 tablespoon of honey or maple syrup to the ricotta for a touch of sweetness. Add 1 teaspoon of vanilla extract for extra flavor and mix the ricotta until it’s smooth and creamy. If the ricotta is too thick for your preference, you can add a tablespoon of milk or water to loosen it up to your desired consistency.
Spoon the prepared ricotta mixture into two bowls, dividing it evenly. Then, top the ricotta with the citrus segments. Arrange the citrus nicely on top to create an aesthetically pleasing look, or simply scoop the citrus into the bowl—however you prefer!
Now, it’s time to add your toppings! You can sprinkle a generous amount of granola over the citrus and ricotta for a delightful crunch. Add a few tablespoons of your favorite chopped nuts, like almonds, pistachios, or walnuts, to give the bowl an added boost of healthy fats and texture.
If you like a touch of extra sweetness, drizzle a bit more honey or maple syrup over the top. Fresh mint leaves can also be added for a burst of color and a refreshing taste. The mint complements the citrus perfectly and adds a pop of freshness to the dish.
Once the bowl is assembled, serve it immediately while the ricotta is fresh and creamy. The combination of sweet citrus, creamy ricotta, and crunchy toppings makes this breakfast bowl a delightful and satisfying way to start your day.
