Ingredients

  • 2 large cucumbers, peeled and sliced
  • 1 pint cherry or grape tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/4 cup chopped fresh parsley or basil (optional)
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar or lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or sugar (optional)
  • Salt and pepper to taste

Instructions

  • Prepare the Vegetables:
    • Slice the cucumbers and halve the cherry or grape tomatoes. Thinly slice the red onion. If using fresh herbs, chop them finely.
  • Make the Dressing:
    • In a small bowl, whisk together the olive oil, red wine vinegar or lemon juice, Dijon mustard, and honey or sugar if using. Season with salt and pepper to taste.
  • Combine the Salad:
    • In a large salad bowl, combine the cucumbers, tomatoes, and red onion. Add the chopped herbs if using.
  • Dress the Salad:
    • Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
  • Serve:
    • Let the salad sit for about 10 minutes before serving to allow the flavors to meld. Serve chilled or at room temperature.
