- 2 large cucumbers, peeled and sliced
- 1 pint cherry or grape tomatoes, halved
- 1/4 red onion, thinly sliced
- 1/4 cup chopped fresh parsley or basil (optional)
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar or lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon honey or sugar (optional)
- Salt and pepper to taste
Instructions
- Prepare the Vegetables:
- Slice the cucumbers and halve the cherry or grape tomatoes. Thinly slice the red onion. If using fresh herbs, chop them finely.
- Make the Dressing:
- In a small bowl, whisk together the olive oil, red wine vinegar or lemon juice, Dijon mustard, and honey or sugar if using. Season with salt and pepper to taste.
- Combine the Salad:
- In a large salad bowl, combine the cucumbers, tomatoes, and red onion. Add the chopped herbs if using.
- Dress the Salad:
- Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
- Serve:
- Let the salad sit for about 10 minutes before serving to allow the flavors to meld. Serve chilled or at room temperature.
