- 1 lb large shrimp, peeled and deveined
- 3 tablespoons unsalted butter
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
- 1/2 cup dry white wine (or chicken broth)
- Juice of 1 lemon
- Zest of 1 lemon
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- Cooked pasta or crusty bread for serving
Instructions
- Prepare the Shrimp:
- Pat the shrimp dry with paper towels. Season with salt and pepper.
- Cook the Shrimp:
- In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat. Add the shrimp in a single layer and cook for 2-3 minutes on each side, or until pink and opaque. Remove the shrimp from the skillet and set aside.
- Make the Garlic Sauce:
- In the same skillet, reduce the heat to medium. Add the remaining butter and let it melt. Stir in the minced garlic and red pepper flakes (if using) and cook for about 1 minute, until fragrant.
- Pour in the white wine (or chicken broth) and lemon juice. Bring to a simmer and cook for 2-3 minutes, allowing the sauce to reduce slightly.
- Combine and Finish:
- Return the cooked shrimp to the skillet and toss to coat in the sauce. Cook for an additional 1-2 minutes until heated through.
- Stir in the lemon zest and chopped parsley. Adjust seasoning with salt and pepper to taste.
- Serve:
- Serve the shrimp scampi over cooked pasta or with crusty bread for dipping. Garnish with extra parsley and lemon wedges if desired.
