- 1 cup all-purpose flour

- 2 large eggs
- 1/2 cup milk (any kind)

- 2 tablespoons melted butter or vegetable oil (plus extra for cooking)
Instructions
- Prepare the Batter:
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, beat the eggs, then mix in the cottage cheese, milk, vanilla extract, and melted butter or oil.
- Combine the wet ingredients with the dry ingredients, stirring until just blended. The batter may be a bit lumpy, which is fine.
- Heat the Pan:
- Heat a large skillet or griddle over medium heat. Lightly grease with butter or oil.
- Cook the Pancakes:
- Pour about 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface and the edges start to look set, about 2-3 minutes.
- Flip and cook for an additional 1-2 minutes, or until golden brown and cooked through.
- Serve:
- Serve the pancakes warm with your favorite toppings such as maple syrup, fresh fruit, or a dollop of yogurt.
