Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk (any kind)
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter or vegetable oil (plus extra for cooking)

Instructions

  • Prepare the Batter:
    • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
    • In another bowl, beat the eggs, then mix in the cottage cheese, milk, vanilla extract, and melted butter or oil.
    • Combine the wet ingredients with the dry ingredients, stirring until just blended. The batter may be a bit lumpy, which is fine.
  • Heat the Pan:
    • Heat a large skillet or griddle over medium heat. Lightly grease with butter or oil.
  • Cook the Pancakes:
    • Pour about 1/4 cup of batter onto the skillet for each pancake.
    • Cook until bubbles form on the surface and the edges start to look set, about 2-3 minutes.
    • Flip and cook for an additional 1-2 minutes, or until golden brown and cooked through.
  • Serve:
    • Serve the pancakes warm with your favorite toppings such as maple syrup, fresh fruit, or a dollop of yogurt.
