  • 1/4 cup fresh orange juice
  • 1 tablespoon grated orange zest
  • 1 cup fresh or frozen cranberries, coarsely chopped
  • 1/2 teaspoon vanilla extract

Instructions

  • Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  • Prepare Dry Ingredients:
    • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  • Cream Butter and Sugars:
    • In a large bowl, beat the softened butter with granulated sugar and brown sugar until light and fluffy.
  • Add Eggs and Flavorings:
    • Beat in the eggs, one at a time, ensuring each is well incorporated before adding the next. Stir in the mashed bananas, orange juice, orange zest, and vanilla extract.
  • Combine Ingredients:
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
    • Fold in the chopped cranberries.
  • Pour and Bake:
    • Pour the batter into the prepared loaf pan and smooth the top with a spatula.
    • Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
  • Cool and Serve:
    • Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
