- 1 cup mashed ripe bananas (about 2–3 bananas)
- 1/4 cup fresh orange juice
- 1 tablespoon grated orange zest
- 1 cup fresh or frozen cranberries, coarsely chopped
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
- Prepare Dry Ingredients:
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
- Cream Butter and Sugars:
- In a large bowl, beat the softened butter with granulated sugar and brown sugar until light and fluffy.
- Add Eggs and Flavorings:
- Beat in the eggs, one at a time, ensuring each is well incorporated before adding the next. Stir in the mashed bananas, orange juice, orange zest, and vanilla extract.
- Combine Ingredients:
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Fold in the chopped cranberries.
- Pour and Bake:
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
- Cool and Serve:
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
