Ingredients
For the Crispy Bang Bang Salmon Bites:
- 1 lb fresh salmon fillets (skin removed)
- 1 cup panko breadcrumbs
- ½ cup all-purpose flour
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Olive oil or cooking spray for frying
For the Bang Bang Sauce:
- ½ cup mayonnaise
- 3 tablespoons sweet chili sauce
- 1–2 tablespoons sriracha sauce (adjust to desired spice level)
- 1 tablespoon honey
- 1 teaspoon rice vinegar (optional, for extra tang)
Instructions
1. Prepare the Salmon
Start by cutting the salmon fillets into bite-sized pieces, about 1 to 1.5 inches each. Remove any bones if necessary. Pat the salmon dry with paper towels to remove any moisture, which helps the breading stick better.
2. Prepare the Breading Station
Set up three shallow bowls for the breading process:
- In the first bowl, combine the all-purpose flour, garlic powder, paprika, salt, and pepper.
- In the second bowl, beat the eggs.
- In the third bowl, place the panko breadcrumbs.
3. Bread the Salmon
Dredge each piece of salmon in the flour mixture, ensuring it is evenly coated. Next, dip the floured salmon into the beaten egg, making sure it’s fully coated. Finally, roll the salmon in the panko breadcrumbs, pressing gently to make sure the breadcrumbs stick.
4. Cook the Salmon Bites
Heat a large frying pan or skillet over medium heat and add a small amount of olive oil or spray with cooking spray. Once the oil is hot, carefully place the breaded salmon bites in the pan in a single layer. Don’t overcrowd the pan; cook the salmon in batches if necessary.
Fry the salmon bites for about 3-4 minutes per side or until golden brown and crispy. Use tongs to flip the bites carefully. Once they’re cooked through and crispy, transfer them to a plate lined with paper towels to drain excess oil.
5. Make the Bang Bang Sauce
While the salmon is frying, prepare the Bang Bang sauce by combining the mayonnaise, sweet chili sauce, sriracha sauce, honey, and rice vinegar (if using) in a small bowl. Whisk everything together until smooth and well-combined. Taste and adjust the heat level by adding more sriracha if you like it spicier.
6. Toss the Salmon Bites in Sauce
Once all the salmon bites are cooked and crispy, place them in a large bowl. Drizzle the Bang Bang sauce over the salmon and gently toss them to coat. Make sure each bite is well covered with the sauce.
7. Serve
Transfer the coated salmon bites to a serving platter and garnish with chopped green onions, sesame seeds, or cilantro, if desired. Serve immediately with extra Bang Bang sauce on the side for dipping.
