This hearty and flavorful nacho topping is made with seasoned ground beef, beans, cheese, and your favorite nacho fixings, all simmered to perfection in the Crock Pot. Serve it over crispy tortilla chips or as a dip, perfect for game day or casual gatherings!

Ingredients

Scale

For the Crock Pot All-in-One Nacho Topping:

  • 1 lb ground beef (or ground turkey, chicken, or a plant-based alternative)
  • 1 medium onion, finely chopped
  • 1 packet taco seasoning (or homemade seasoning mix)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies (such as Ro*Tel)
  • 1 can (4 oz) diced green chilies
  • 1 cup corn kernels (frozen or canned)
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup sour cream
  • 1 tablespoon olive oil (for cooking the meat)
  • Optional toppings: sliced jalapeños, chopped cilantro, salsa, guacamole, extra cheese, sour cream, or hot sauce

Instructions

1. Brown the Ground Beef

Start by heating the olive oil in a skillet over medium heat. Add the chopped onion and cook until softened, about 3-5 minutes. Then, add the ground beef (or your chosen meat) and cook until browned and fully cooked through, breaking it apart with a spoon as it cooks. This will take about 7-10 minutes. If you’re using lean meat, you may want to drain any excess fat before adding it to the Crock Pot.

Once the meat is cooked, add the taco seasoning (store-bought or homemade) and follow the instructions on the packet. This typically involves adding a small amount of water to help the seasoning coat the meat and form a flavorful base for the topping. Stir well to combine and set the mixture aside.

2. Layer the Crock Pot Ingredients

In the bottom of your Crock Pot, begin layering the ingredients. Start by adding the seasoned ground beef mixture. This provides the base layer of flavor and ensures the meat is evenly distributed.

Next, layer the beans, including black beans and pinto beans. Beans add a rich creaminess and a hearty texture to the nacho topping. Make sure they’re drained and rinsed to remove excess sodium or preservatives.

Add the diced tomatoes with green chilies, followed by the can of diced green chilies. These will give the topping a slight heat and a burst of fresh, tangy flavor.

Then, add the frozen or canned corn kernels. The corn adds a sweet crunch that balances out the richness of the other ingredients.

3. Add the Cream Cheese

Cut the softened cream cheese into cubes and place it evenly over the layered ingredients in the Crock Pot. The cream cheese will melt and create a creamy texture that binds all the ingredients together, making the topping smooth and rich.

4. Top with Cheeses and Sour Cream

Sprinkle the shredded cheddar and Monterey Jack cheeses evenly over the top of the ingredients in the Crock Pot. These cheeses will melt beautifully and create a gooey, cheesy topping that makes this dish irresistible.

Finally, dollop the sour cream on top of the cheese. This will add an extra layer of creaminess and tanginess to the dish, enriching the flavor profile.

5. Cook the Nacho Topping

Cover the Crock Pot with its lid and set it to cook on low for 2.5 to 3 hours, or on high for 1.5 hours. During this time, the flavors will meld together, and the cheese will melt into a delicious, gooey mixture.

About halfway through the cooking time, give everything a gentle stir to ensure that all the ingredients are blending together nicely. You can also check for doneness at this point. The cheese should be melted and bubbly, and the edges of the dish will begin to brown slightly.

6. Serve and Enjoy

Once the nacho topping is fully cooked, give it a final stir to mix everything together. You should now have a creamy, cheesy, and flavorful topping that’s perfect for serving with nachos, tacos, or even as a dip.

Serve the Crock Pot All-in-One Nacho Topping with a large bowl of tortilla chips, or scoop it onto soft taco shells for delicious nachos or tacos. Add optional toppings like jalapeños, chopped cilantro, salsa, extra cheese, guacamole, or a drizzle of hot sauce to personalize your creation.
