For the Irish Pub Burger:

  • 1 lb (450g) ground beef (preferably 80% lean)

  • 4 brioche buns (or your choice of burger buns)

  • 4 slices Irish cheddar cheese (or any sharp cheddar)

  • 4 slices crispy bacon

  • 1 small onion, thinly sliced

  • 2 tablespoons butter (for toasting buns)

  • Salt and pepper, to taste

  • Optional: 1 teaspoon of Worcestershire sauce (for the burger patty)

For the Special Irish Sauce:

  • ½ cup mayonnaise

  • 2 tablespoons Dijon mustard

  • 1 tablespoon honey

  • 1 tablespoon apple cider vinegar

  • 1 teaspoon hot sauce (optional, for a kick)

  • Salt and pepper, to taste


Instructions

1. Prepare the Burger Patties

Start by shaping the ground beef into four even patties. If you prefer, you can add a teaspoon of Worcestershire sauce to the beef mixture to enhance the savory flavor. Season each patty generously with salt and pepper. The ground beef should be handled as little as possible to keep the patties tender.

If you’re using a burger press, place the beef in the press and form the patties, or simply shape the patties with your hands. Make sure they are slightly larger than the buns, as they will shrink a little during cooking.

2. Cook the Bacon

While the patties are being prepared, cook the bacon in a pan over medium heat. Fry until crispy, turning occasionally to ensure even cooking. Once cooked, transfer the bacon to a paper towel-lined plate to drain the excess fat.

3. Toast the Buns

Melt the butter in a small pan over medium heat. Place the buns cut side down and toast them until golden brown and crispy, about 2-3 minutes. If you’re using a grill, you can also toast the buns on the grill for a few minutes until they’re golden.

4. Cook the Burger Patties

Now, it’s time to cook the beef patties. Heat a grill or cast iron skillet over medium-high heat. Once hot, place the patties on the grill or in the skillet. Cook for about 4-5 minutes per side for medium doneness, or longer if you prefer your burger more well-done. In the last minute of cooking, add a slice of Irish cheddar cheese to each patty and cover it with a lid to melt the cheese.

5. Prepare the Irish Sauce

While the burgers are cooking, prepare the special Irish sauce by mixing the mayonnaise, Dijon mustard, honey, apple cider vinegar, and hot sauce (if using) in a small bowl. Stir well to combine, then season with salt and pepper to taste. This creamy sauce adds the perfect tang and sweetness to the burger.

6. Assemble the Irish Pub Burger

To assemble the burgers, start by spreading a generous amount of the Irish sauce on the bottom half of each toasted bun. Add the beef patty with melted cheese on top. Layer the patty with a slice of crispy bacon and a few slices of thinly sliced onion. Finally, place the top half of the bun on top of the burger.

7. Serve and Enjoy
