Ingredients

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 cup granulated sugar
  • ½ cup packed brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups grated zucchini (about 1 medium zucchini)
  • Optional: ½ cup chopped nuts or chocolate chips

Instructions

  • Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  • Prepare the Zucchini:
    • Grate the zucchini and squeeze out excess moisture using a clean kitchen towel or cheesecloth. Set aside.
  • Mix Dry Ingredients:
    • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  • Combine Wet Ingredients:
    • In a large bowl, beat together the granulated sugar, brown sugar, and vegetable oil until well combined. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  • Combine and Fold:
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the grated zucchini and optional nuts or chocolate chips if using.
  • Pour and Bake:
    • Pour the batter into the prepared loaf pan and spread it evenly. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool and Serve:
    • Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
