- 1 cup granulated sugar

- ½ cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups grated zucchini (about 1 medium zucchini)
- Optional: ½ cup chopped nuts or chocolate chips
Instructions
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
- Prepare the Zucchini:
- Grate the zucchini and squeeze out excess moisture using a clean kitchen towel or cheesecloth. Set aside.
- Mix Dry Ingredients:
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
- Combine Wet Ingredients:
- In a large bowl, beat together the granulated sugar, brown sugar, and vegetable oil until well combined. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
- Combine and Fold:
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the grated zucchini and optional nuts or chocolate chips if using.
- Pour and Bake:
- Pour the batter into the prepared loaf pan and spread it evenly. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Serve:
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
