Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup salsa
  • 1 packet (1 oz) taco seasoning mix
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup crushed tortilla chips
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  • Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  • Cook the Beef:
    • In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks. Drain any excess fat.
  • Add Flavor and Ingredients:
    • Stir in the taco seasoning mix and salsa. Cook for 1-2 minutes until well combined.
    • Add the black beans, kidney beans, and corn to the skillet. Stir to combine and cook for an additional 2-3 minutes.
  • Assemble the Casserole:
    • Transfer the beef and bean mixture to a greased 9×13-inch baking dish.
    • Sprinkle the shredded cheddar and Monterey Jack cheeses evenly over the top.
    • Spread the crushed tortilla chips on top of the cheese.
  • Bake:
    • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
  • Serve:
    • Allow the casserole to cool for a few minutes before serving. Enjoy!
