- 1 lb ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup salsa
- 1 packet (1 oz) taco seasoning mix
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 cup crushed tortilla chips
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Cook the Beef:
- In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks. Drain any excess fat.
- Add Flavor and Ingredients:
- Stir in the taco seasoning mix and salsa. Cook for 1-2 minutes until well combined.
- Add the black beans, kidney beans, and corn to the skillet. Stir to combine and cook for an additional 2-3 minutes.
- Assemble the Casserole:
- Transfer the beef and bean mixture to a greased 9×13-inch baking dish.
- Sprinkle the shredded cheddar and Monterey Jack cheeses evenly over the top.
- Spread the crushed tortilla chips on top of the cheese.
- Bake:
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
- Serve:
- Allow the casserole to cool for a few minutes before serving. Enjoy!
