Ingredients

  • 6 large eggs
  • 1/2 cup milk (whole or 2%)
  • 1/2 lb breakfast sausage (bulk, not in casings)
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced bell peppers (any color)
  • 1/2 cup diced onions
  • 1/2 cup cooked and crumbled bacon (optional)
  • 4 large flour tortillas
  • Salt and pepper to taste
  • 1 tablespoon olive oil or butter (for cooking)

Instructions

  • Prepare the Filling:
    • In a large skillet, heat the olive oil or butter over medium heat. Add the breakfast sausage and cook until browned and cooked through, breaking it apart with a spoon. Remove the sausage from the skillet and set aside.
    • In the same skillet, add the diced bell peppers and onions. Cook until softened, about 3-4 minutes. If using bacon, add it to the skillet as well. Remove from heat.
  • Scramble the Eggs:
    • In a medium bowl, whisk together the eggs and milk. Season with salt and pepper.
    • In a non-stick skillet, heat a small amount of oil or butter over medium-low heat. Pour in the egg mixture and cook, stirring gently, until the eggs are scrambled and just set. Remove from heat.
  • Assemble the Burritos:
    • Warm the tortillas in a dry skillet or microwave until pliable.
    • Lay each tortilla flat and divide the scrambled eggs, cooked sausage, bell peppers, onions, and cheese evenly among them.
    • Roll up each tortilla tightly, folding in the sides to secure the filling.
  • Cook the Burritos (Optional):
    • For a crispy exterior, place the assembled burritos seam-side down in a dry skillet over medium heat. Cook for 2-3 minutes on each side until golden brown and crispy.
  • Serve:
    • Slice the burritos in half if desired and serve warm. Enjoy with salsa, sour cream, or avocado if you like!
