Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, diced
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1 cup frozen mixed vegetables (carrots, peas, corn)
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • ¼ cup melted butter
  • ½ cup sour cream

Instructions

I. Preheat the Oven:

  • Preheat your oven to 375°F (190°C).

II. Prepare the Chicken Mixture:

  • In a large bowl, combine the diced chicken, cream of chicken soup, chicken broth, and frozen mixed vegetables. Mix well and pour into a greased 9×13-inch baking dish.

III. Prepare the Dumplings:

  • In a separate bowl, mix together the flour, baking powder, salt, pepper, and garlic powder. Add the milk, melted butter, and sour cream, and stir until just combined.

IV. Assemble the Casserole:

  • Spoon the dumpling batter over the chicken mixture in the baking dish, spreading it out evenly. Sprinkle the shredded cheddar cheese on top.

V. Bake:

  • Bake in the preheated oven for 35-40 minutes, or until the dumplings are golden brown and cooked through and the casserole is bubbly.

VI. Serve:

  • Let the casserole cool for a few minutes before serving. Enjoy!
