  • 2 large eggs
  • 1 1/2 cups milk
  • 2 tablespoons melted butter or oil
  • 1 tablespoon sugar (for sweet crepes; omit for savory)
  • 1/4 teaspoon salt
  • Butter or oil for cooking

Instructions

  • Prepare the Batter:
    • In a large bowl, whisk together the flour, eggs, milk, melted butter or oil, sugar (if using), and salt until smooth. Let the batter rest for 15-30 minutes. This helps to improve the texture of the crepes.
  • Preheat the Pan:
    • Heat a non-stick skillet or crepe pan over medium heat. Lightly grease with a small amount of butter or oil.
  • Cook the Crepes:
    • Pour about 1/4 cup of batter into the hot pan, tilting and swirling to spread it evenly into a thin layer. Cook for 1-2 minutes or until the edges start to lift and the bottom is lightly golden. Flip and cook for another 1-2 minutes on the other side. Repeat with the remaining batter, greasing the pan as needed.
