Instructions
- Prepare the Batter:
- In a large bowl, whisk together the flour, eggs, milk, melted butter or oil, sugar (if using), and salt until smooth. Let the batter rest for 15-30 minutes. This helps to improve the texture of the crepes.
- Preheat the Pan:
- Heat a non-stick skillet or crepe pan over medium heat. Lightly grease with a small amount of butter or oil.
- Cook the Crepes:
- Pour about 1/4 cup of batter into the hot pan, tilting and swirling to spread it evenly into a thin layer. Cook for 1-2 minutes or until the edges start to lift and the bottom is lightly golden. Flip and cook for another 1-2 minutes on the other side. Repeat with the remaining batter, greasing the pan as needed.
