Easy Lasagna Soup

Ingredients

Scale
  • 1 lb ground beef or Italian sausage
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • 8 oz lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish (optional)

Instructions

I. Cook the Meat

  • In a large pot, brown the ground beef or sausage over medium heat until fully cooked. Drain any excess fat.

II. Sauté Vegetables

  • Add the chopped onion and garlic to the pot. Cook until the onion is translucent, about 3-4 minutes.

III. Add the Tomatoes and Broth

  • Stir in the crushed tomatoes, broth, Italian seasoning, salt, and pepper. Bring to a simmer.

IV. Cook the Noodles

  • Add the broken lasagna noodles to the pot. Cook according to package instructions, about 8-10 minutes, until al dente.

V. Incorporate Cheese

  • Reduce heat to low and stir in the ricotta, half of the mozzarella, and half of the Parmesan. Mix until well combined and heated through.

VI. Serve

  • Ladle the soup into bowls, top with remaining mozzarella and Parmesan, and garnish with fresh basil if desired. Enjoy!
