- 1 lb ground beef or Italian sausage
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken or vegetable broth
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
- 8 oz lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish (optional)
Instructions
I. Cook the Meat
- In a large pot, brown the ground beef or sausage over medium heat until fully cooked. Drain any excess fat.
II. Sauté Vegetables
- Add the chopped onion and garlic to the pot. Cook until the onion is translucent, about 3-4 minutes.
III. Add the Tomatoes and Broth
- Stir in the crushed tomatoes, broth, Italian seasoning, salt, and pepper. Bring to a simmer.
IV. Cook the Noodles
- Add the broken lasagna noodles to the pot. Cook according to package instructions, about 8-10 minutes, until al dente.
V. Incorporate Cheese
- Reduce heat to low and stir in the ricotta, half of the mozzarella, and half of the Parmesan. Mix until well combined and heated through.
VI. Serve
- Ladle the soup into bowls, top with remaining mozzarella and Parmesan, and garnish with fresh basil if desired. Enjoy!
