Ingredients
For the Garlic Butter Sausage Bites:
- 1 lb (450g) sausage links (choose your favorite type, such as Italian sausage, chicken sausage, or pork sausage)
- 4 tablespoons unsalted butter
- 6 cloves garlic, minced
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
- 1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried rosemary)
- 1/4 teaspoon red pepper flakes (optional for a spicy kick)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
Start by removing the sausage links from their casings. Using a sharp knife or your hands, cut the sausages into bite-sized pieces (about 1 to 1.5 inches in length). If you prefer, you can leave the sausages whole and slice them into rounds after cooking, but cutting them into chunks ahead of time will make them easier to cook and toss in the garlic butter sauce.
Heat a large skillet over medium heat and add a drizzle of olive oil to coat the bottom of the pan. Once the skillet is hot, add the sausage pieces in a single layer, making sure not to overcrowd the pan. Allow the sausages to cook for 5-7 minutes, turning occasionally with tongs until they are golden brown and cooked through. The sausages should be slightly crispy on the outside and juicy on the inside.
Once cooked, transfer the sausage pieces to a plate and set them aside. Leave a little bit of the sausage drippings in the pan for flavor.
In the same skillet, reduce the heat to low and add the butter. Let it melt completely, swirling the pan to ensure it coats the bottom. Once the butter has melted, add the minced garlic and sauté it for 1-2 minutes until fragrant. Be careful not to burn the garlic, as it can turn bitter if overcooked.
Next, add the fresh thyme, rosemary, and red pepper flakes (if using). Stir the herbs into the garlic butter sauce, allowing them to release their aromatic oils and infuse the butter with flavor. Season with salt and pepper to taste. The garlic butter sauce will start to bubble and become fragrant.
Add the cooked sausage bites back into the skillet, tossing them gently in the garlic butter sauce to coat them evenly. Let the sausages simmer in the sauce for another 2-3 minutes to soak up the flavors. Stir occasionally to ensure that every piece gets a good amount of sauce.
Once the sausages are fully coated in the garlic butter sauce and heated through, transfer them to a serving plate. Garnish with fresh parsley for a pop of color and a burst of fresh flavor. Serve immediately while they are still warm and juicy.
