For the Garlic Butter Sauce:

  • 4 tablespoons unsalted butter
  • 4 cloves garlic (minced)
  • 1 tablespoon fresh parsley (chopped, optional for garnish)
  • 1 teaspoon fresh thyme (optional for added flavor)
  • 1 teaspoon lemon juice (optional for a tangy kick)
  • Pinch of red pepper flakes (optional for a little heat)

  • 1 tablespoon soy sauce or Worcestershire sauce for extra umami flavor
  • 1 tablespoon Dijon mustard for a tangy finish

Instructions

Step 1: Prepare the Steak

Start by preparing your steak. You’ll want to use a sirloin steak (or any cut of steak you prefer) that’s easy to cube and sear. Slice the steak into bite-sized cubes, about 1 to 1.5 inches in size.

Once the steak is cut into bite-sized pieces, season generously with salt and pepper on all sides. This is key to building the base flavor for the garlic butter sauce.

Step 2: Heat the Skillet

Heat a large non-stick skillet or cast-iron pan over medium-high heat. You want the pan to get hot before adding the steak to ensure a good sear and to lock in the flavors. Add 1 tablespoon of olive oil to the pan, swirling to coat the bottom evenly.

Step 3: Sear the Steak Bites

Once the oil is hot (but not smoking), add the steak bites in a single layer. Let them cook undisturbed for 2-3 minutes, allowing them to get a good sear on one side. Once that side is nicely browned, flip the steak bites over and sear the other side for another 2-3 minutes. Continue to cook in batches if necessary, as overcrowding the pan will result in steaming the steak instead of searing it.

For perfectly cooked steak bites, you’ll want them to reach an internal temperature of about 130°F (54°C) for medium-rare or 140°F (60°C) for medium. If you prefer them well done, cook them a bit longer, but remember that they’ll continue cooking slightly after removing from the pan.

Once the steak bites are seared to your liking, remove them from the pan and set aside.

Step 4: Make the Garlic Butter Sauce

In the same pan, add 4 tablespoons of butter over medium heat. Let the butter melt and start to bubble, but don’t let it brown. Once melted, add the minced garlic and cook for 1-2 minutes until fragrant, being careful not to burn the garlic.

If you’re using additional ingredients like soy sauce, Worcestershire sauce, or Dijon mustard, add them to the pan now and stir to combine with the garlic butter.

Once the garlic is soft and fragrant, add the steak bites back into the pan, tossing them to coat in the garlic butter sauce. Allow the steak to cook in the sauce for another 2-3 minutes so the flavors meld together. If you like a little heat, you can sprinkle in a pinch of red pepper flakes for a spicy kick.

Finally, add a squeeze of lemon juice (optional) to brighten up the sauce and balance the richness of the butter.

Step 5: Serve

Once the steak bites are coated in the delicious garlic butter sauce, remove them from the heat and transfer them to a serving dish. Sprinkle the steak bites with fresh parsley and thyme (if using), and add a little more salt and pepper to taste.

Serve immediately while hot, making sure to get all that garlicky goodness with every bite. These steak bites pair perfectly with mashed potatoes, rice, or a simple side salad.
