- 1 lb fresh green beans, trimmed
- 6 strips of bacon
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon lemon juice (optional)
- 1 tablespoon chopped fresh parsley (optional, for garnish)
Instructions
- Cook the Bacon:
- In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and place on paper towels to drain. Once cooled, crumble the bacon into pieces.
- Prepare the Green Beans:
- While the bacon is cooking, trim the ends off the green beans.
- Bring a large pot of salted water to a boil. Add the green beans and blanch for 3-4 minutes until they are bright green and tender-crisp. Drain and immediately transfer the green beans to a bowl of ice water to stop the cooking process. Drain again and set aside.
- Sauté the Green Beans:
- In the same skillet that you cooked the bacon in, add olive oil and heat over medium heat.
- Add the minced garlic and cook for 1 minute, or until fragrant but not browned.
- Add the blanched green beans to the skillet and sauté for 3-4 minutes, stirring occasionally, until the green beans are heated through and coated with the garlic.
- Combine and Serve:
- Stir in the crumbled bacon and season with salt and pepper to taste. If desired, add a squeeze of lemon juice for a fresh zing.
- Garnish with chopped fresh parsley if desired.
- Serve:
- Serve warm as a delicious side dish to your favorite main courses.
