For the Breakfast:
- 2 medium sweet potatoes (peeled and diced)
- 2 tablespoons olive oil
- 4 cloves garlic (minced)
- 1/2 cup grated Parmesan cheese
- 4 large eggs
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Prepare the Sweet Potatoes: Toss the diced sweet potatoes with olive oil, minced garlic, salt, and pepper in a baking dish. Spread them in a single layer.
- Bake: Roast in the preheated oven for 25-30 minutes, or until tender and slightly crispy. Stir halfway through for even cooking.
- Add Cheese: Remove the sweet potatoes from the oven and sprinkle with Parmesan cheese. Make 4 small wells in the mixture and crack an egg into each well.
- Bake Again: Return to the oven and bake for an additional 10-12 minutes, or until the eggs are set to your liking.
- Serve: Garnish with fresh parsley and enjoy warm!
