Ingredients

  • 1 large cucumber, sliced thinly
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh chives, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  • Prepare the Vegetables:
    • In a large bowl, combine the shredded cabbage, sliced cucumber, and red onion.
  • Make the Dressing:
    • In a small bowl or jar, whisk together the olive oil, apple cider vinegar, lemon juice, honey (or maple syrup), Dijon mustard, salt, and pepper until well combined.
  • Combine and Toss:
    • Pour the dressing over the cabbage mixture and toss well to coat all the ingredients evenly.
    • Add the chopped parsley, dill, and chives. Toss gently to combine.
  • Serve:
    • Allow the salad to sit for 10-15 minutes to let the flavors meld together. Serve chilled or at room temperature.
