Instructions
- Prepare the Vegetables:
- In a large bowl, combine the shredded cabbage, sliced cucumber, and red onion.
- Make the Dressing:
- In a small bowl or jar, whisk together the olive oil, apple cider vinegar, lemon juice, honey (or maple syrup), Dijon mustard, salt, and pepper until well combined.
- Combine and Toss:
- Pour the dressing over the cabbage mixture and toss well to coat all the ingredients evenly.
- Add the chopped parsley, dill, and chives. Toss gently to combine.
- Serve:
- Allow the salad to sit for 10-15 minutes to let the flavors meld together. Serve chilled or at room temperature.
