For the Shrimp:
- 1 lb large shrimp, peeled and deveined

- 1 teaspoon chili powder

For the Toppings:
- 1 cup shredded cabbage (green or purple)
- 1 cup cherry tomatoes, halved
- 1/4 cup chopped red onion

- 1 lime, cut into wedges
For the Sauce:
- 1/2 cup sour cream
- 2 tablespoons lime juice
- 1 teaspoon honey
- 1/2 teaspoon chili powder
- Salt to taste
For Serving:
- 8 small tortillas (corn or flour)
- Additional lime wedges (for garnish)
Instructions
- Marinate the Shrimp:
- In a large bowl, combine the olive oil, lime juice, minced garlic, chili powder, cumin, smoked paprika, salt, and pepper.
- Add the shrimp and toss to coat evenly. Marinate for at least 15 minutes, or up to 1 hour if you have time.
- Prepare the Grill:
- Preheat your grill to medium-high heat (about 400°F or 200°C). If using a grill pan, heat it over medium-high heat on the stovetop.
- Grill the Shrimp:
- Thread the marinated shrimp onto skewers (if using wooden skewers, soak them in water for 30 minutes before using).
- Grill the shrimp for 2-3 minutes per side, or until they are opaque and slightly charred. Remove from the grill and let rest.
- Make the Sauce:
- In a small bowl, mix together the sour cream, lime juice, honey, chili powder, and salt until smooth. Adjust seasoning to taste.
- Prepare the Toppings:
- In a medium bowl, combine the shredded cabbage, cherry tomatoes, red onion, avocado, and cilantro. Toss gently to mix.
- Warm the Tortillas:
- Heat the tortillas on the grill for about 30 seconds per side, or wrap them in foil and warm them in the oven at 350°F (175°C) for about 10 minutes.
- Assemble the Tacos:
- Place a few grilled shrimp in each tortilla.
- Top with the cabbage mixture and a drizzle of the sour cream sauce.
- Garnish with extra cilantro and lime wedges.
- Serve:
- Serve the tacos immediately, with additional lime wedges on the side. Enjoy!
