For the Shrimp:

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Toppings:

  • 1 cup shredded cabbage (green or purple)
  • 1 cup cherry tomatoes, halved
  • 1/4 cup chopped red onion
  • 1 avocado, diced
  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges

For the Sauce:

  • 1/2 cup sour cream
  • 2 tablespoons lime juice
  • 1 teaspoon honey
  • 1/2 teaspoon chili powder
  • Salt to taste

For Serving:

  • 8 small tortillas (corn or flour)
  • Additional lime wedges (for garnish)

Instructions

  • Marinate the Shrimp:
    • In a large bowl, combine the olive oil, lime juice, minced garlic, chili powder, cumin, smoked paprika, salt, and pepper.
    • Add the shrimp and toss to coat evenly. Marinate for at least 15 minutes, or up to 1 hour if you have time.
  • Prepare the Grill:
    • Preheat your grill to medium-high heat (about 400°F or 200°C). If using a grill pan, heat it over medium-high heat on the stovetop.
  • Grill the Shrimp:
    • Thread the marinated shrimp onto skewers (if using wooden skewers, soak them in water for 30 minutes before using).
    • Grill the shrimp for 2-3 minutes per side, or until they are opaque and slightly charred. Remove from the grill and let rest.
  • Make the Sauce:
    • In a small bowl, mix together the sour cream, lime juice, honey, chili powder, and salt until smooth. Adjust seasoning to taste.
  • Prepare the Toppings:
    • In a medium bowl, combine the shredded cabbage, cherry tomatoes, red onion, avocado, and cilantro. Toss gently to mix.
  • Warm the Tortillas:
    • Heat the tortillas on the grill for about 30 seconds per side, or wrap them in foil and warm them in the oven at 350°F (175°C) for about 10 minutes.
  • Assemble the Tacos:
    • Place a few grilled shrimp in each tortilla.
    • Top with the cabbage mixture and a drizzle of the sour cream sauce.
    • Garnish with extra cilantro and lime wedges.
  • Serve:
    • Serve the tacos immediately, with additional lime wedges on the side. Enjoy!
