Ingredients
For the Ground Beef Casserole:
- 1 lb (450g) ground beef
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 cup frozen peas (or any preferred vegetable, such as carrots or corn)
- 2 cups cooked pasta (elbow macaroni, penne, or rotini work well)
- 1 cup sour cream
- 1 cup shredded cheese (cheddar, mozzarella, or a blend)
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon olive oil (for sautéing)
- Optional: Fresh parsley or basil for garnish
Instructions
In a large skillet, heat the olive oil over medium heat. Once hot, add the ground beef and cook, breaking it up with a wooden spoon or spatula. Brown the beef for about 5-7 minutes, or until fully cooked and no longer pink. Once the beef is browned, drain any excess fat if needed and return the beef to the skillet.
Add the chopped onion and minced garlic to the skillet with the cooked beef. Sauté the mixture for about 3-4 minutes, or until the onion softens and becomes translucent. This step enhances the flavor of the beef and creates a savory base for the casserole.
Stir in the diced tomatoes (drained), frozen peas, and any other vegetables you wish to include. Mix well to combine all the ingredients. Let the mixture cook for another 3-5 minutes to allow the vegetables to thaw and heat through. You can also add additional vegetables like corn or carrots to suit your preference.
To the beef and vegetable mixture, add Worcestershire sauce, dried oregano, garlic powder, onion powder, salt, and black pepper. Stir to combine and taste the mixture. Adjust the seasoning as needed, adding more salt, pepper, or Worcestershire sauce if desired.
In a large mixing bowl, combine the cooked pasta and sour cream. Stir until the pasta is well coated with the sour cream. Add the beef and vegetable mixture to the pasta, mixing everything together until evenly combined. The creamy sour cream will help bind the casserole and create a rich, velvety texture.
Preheat your oven to 375°F (190°C). Grease a 9×13-inch casserole dish with cooking spray or a small amount of olive oil. Once greased, transfer the beef, pasta, and vegetable mixture into the casserole dish, spreading it out evenly.
Sprinkle the shredded cheese evenly over the top of the casserole. You can use cheddar, mozzarella, or any cheese you prefer. The cheese will melt and form a golden, bubbly crust as it bakes, adding extra flavor and texture to the dish.
Cover the casserole dish with aluminum foil and bake it in the preheated oven for 30 minutes. This will allow the casserole to heat through and ensure that the flavors meld together. After 30 minutes, remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is melted and bubbly and slightly golden on top.
Once the casserole is baked to perfection, remove it from the oven and allow it to cool for a few minutes before serving. Garnish with freshly chopped parsley or basil for a burst of color and added freshness. Serve the casserole hot, alongside a simple salad or roasted vegetables for a well-rounded meal.
