For the Guacamole:

  • 3 ripe avocados
  • 1 small onion, finely diced
  • 12 medium tomatoes, diced
  • 12 cloves garlic, minced
  • 1 tablespoon lime juice (freshly squeezed)
  • 2 tablespoons fresh cilantro, chopped
  • 1 small jalapeño pepper, finely diced (optional, for heat)
  • Salt and freshly ground black pepper, to taste
  • Optional: 1 teaspoon cumin or chili powder for added depth of flavor

For the Salsa:

  • 45 medium tomatoes, diced
  • 1 small onion, finely chopped
  • 12 cloves garlic, minced
  • 1 small jalapeño, finely diced (adjust based on preferred heat level)
  • 1 tablespoon lime juice (freshly squeezed)
  • 2 tablespoons fresh cilantro, chopped
  • Salt and freshly ground black pepper, to taste
  • Optional: 1 teaspoon sugar (to balance acidity)
  • Optional: 1 tablespoon apple cider vinegar (for extra tanginess)

Instructions

1. Prepare the Guacamole

Start by cutting the avocados in half. Remove the pits and scoop the flesh into a large bowl. Mash the avocado with a fork or potato masher until it reaches your desired texture. If you like your guacamole smooth, mash it thoroughly. For chunkier guacamole, leave some larger pieces of avocado.

Next, add the finely diced onion, tomatoes, garlic, and cilantro to the mashed avocado. Stir to combine all the ingredients evenly. If you’re using jalapeño for heat, add it now and adjust the amount to your liking.

Squeeze in the fresh lime juice to add brightness and prevent the guacamole from turning brown. Season with salt and freshly ground black pepper to taste. If you’d like, you can also add a pinch of cumin or chili powder for an extra layer of flavor. Stir everything together and taste the guacamole, adjusting the seasoning if necessary.

2. Prepare the Salsa

For the salsa, start by dicing the tomatoes and placing them in a medium-sized bowl. Add the finely chopped onion, garlic, and cilantro. Stir to combine.

If you prefer a spicier salsa, add the diced jalapeño to the mixture. The amount of jalapeño can be adjusted depending on your preferred level of heat. For a milder salsa, remove the seeds from the jalapeño before dicing it.

Squeeze fresh lime juice into the bowl and mix well. Taste the salsa and season with salt, freshly ground black pepper, and sugar (if needed to balance the acidity). If you prefer a tangier salsa, you can also add a tablespoon of apple cider vinegar to give it an extra zing.

3. Chill (Optional)

While Guacamole and Salsa can be served immediately, it’s often best to let them sit for about 15-20 minutes to allow the flavors to meld together. This is especially true for the salsa, as the longer it sits, the more the ingredients can marry and develop a richer flavor.

You can also cover the guacamole with plastic wrap (pressing the wrap directly onto the surface to prevent browning) and refrigerate it for up to 1-2 hours. However, it’s best to enjoy both dips fresh.

4. Serve the Guacamole and Salsa

Once your Guacamole and Salsa are ready, serve them together in small bowls with tortilla chips, tacos, grilled meats, or your favorite Mexican-inspired dishes. Both dips are also fantastic when paired with quesadillas, fajitas, or as a topping for nachos.
