  • 1 tablespoon lemon juice (to prevent browning)

  • Sliced radishes (for eyeballs)
  • Cherry tomatoes (for eyeballs or decoration)
  • Black olives (sliced, for eyeball centers)
  • Microgreens or sprouts (for added color)
  • Optional: Red pepper flakes or chili powder (for a spicy kick)

Instructions

  • Toast the Bread: Start by toasting the bread slices to your desired level of crispiness.
  • Prepare the Avocado: In a bowl, mash the avocado with lemon juice, salt, and pepper until creamy but still chunky.
  • Spread the Avocado: Evenly spread the mashed avocado over each slice of toasted bread.
  • Create Eyeballs:
    • For the eyeballs, place a sliced radish on top of the avocado for the “white” part.
    • Add a slice of black olive in the center for the “pupil.”
    • If using cherry tomatoes, cut them in half and place them on the toast as well, using olives for the centers.
  • Add Finishing Touches: Top with microgreens or sprouts for an extra pop of color. Sprinkle with red pepper flakes or chili powder if desired.
  • Serve: Cut the toast in half or quarters for easy eating and serve immediately.
