Ingredients
Scale
- 2 slices of bread (your choice: whole grain, sourdough, or gluten-free)
- 1 ripe avocado
- 1 tablespoon lemon juice (to prevent browning)
- Salt and pepper (to taste)
- Sliced radishes (for eyeballs)
- Cherry tomatoes (for eyeballs or decoration)
- Black olives (sliced, for eyeball centers)
- Microgreens or sprouts (for added color)
- Optional: Red pepper flakes or chili powder (for a spicy kick)
Instructions
- Toast the Bread: Start by toasting the bread slices to your desired level of crispiness.
- Prepare the Avocado: In a bowl, mash the avocado with lemon juice, salt, and pepper until creamy but still chunky.
- Spread the Avocado: Evenly spread the mashed avocado over each slice of toasted bread.
- Create Eyeballs:
- For the eyeballs, place a sliced radish on top of the avocado for the “white” part.
- Add a slice of black olive in the center for the “pupil.”
- If using cherry tomatoes, cut them in half and place them on the toast as well, using olives for the centers.
- Add Finishing Touches: Top with microgreens or sprouts for an extra pop of color. Sprinkle with red pepper flakes or chili powder if desired.
- Serve: Cut the toast in half or quarters for easy eating and serve immediately.
