Description
Light, fluffy, and packed with protein, these egg white bites are a healthy snack or breakfast option. Made with egg whites, vegetables, and cheese, they offer a satisfying, low-carb, and high-protein bite-sized snack.
Ingredients
For the High-Protein Egg White Bites:
- 1 dozen egg whites (about 10–12 egg whites)
- 1/4 cup diced bell peppers (any color)
- 1/4 cup diced onions (optional)
- 1/4 cup spinach or kale, chopped (optional)
- 1/4 cup shredded cheese (optional, use a low-fat cheese for fewer calories)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon paprika
- Salt and pepper, to taste
- 1 tablespoon olive oil or cooking spray for greasing the muffin tin
- Fresh herbs for garnish (optional: parsley, chives, or cilantro)
Instructions
1. Prepare the Ingredients
Before you start cooking, prep your vegetables. Dice the bell peppers and onions into small pieces. If you’re using spinach or kale, chop it finely. This will allow the veggies to cook quickly and blend evenly into the egg whites. If you’re using shredded cheese, set it aside as well.
Make sure you have a muffin tin ready. You’ll need one with 12 slots to make the egg white bites. Spray the muffin tin with cooking spray or brush it with a little olive oil to prevent the bites from sticking.
2. Preheat the Oven
Preheat your oven to 350°F (175°C) to make sure it’s hot and ready for the egg white bites. The high temperature ensures the egg whites cook through quickly without becoming rubbery, and it also helps the bites hold their shape.
3. Whisk the Egg Whites
In a large mixing bowl, crack the eggs and separate the egg whites into the bowl, discarding the yolks or saving them for another recipe. You can use an egg separator or crack each egg individually and gently pour the egg whites into the bowl while holding back the yolk. Use a whisk to beat the egg whites until they are slightly frothy and well combined. This step helps the egg whites fluff up during baking, resulting in a light and airy texture.
Add the garlic powder, paprika, salt, and pepper to the egg whites. These spices will give the bites a savory flavor, but you can adjust the seasonings based on your preferences. Whisk everything together until the mixture is smooth and well seasoned.
4. Combine with Vegetables and Cheese (Optional)
Once the egg whites are seasoned, stir in your diced vegetables (bell peppers, onions, spinach, or kale) and shredded cheese, if you’re using any. The vegetables will add color, texture, and nutrients, while the cheese can provide a rich, creamy flavor. If you’re looking for a lighter option, you can skip the cheese or use a small amount of low-fat cheese to keep the calories down.
Gently fold everything together to ensure the vegetables and cheese are evenly distributed throughout the egg whites.
5. Pour into Muffin Tin
Carefully pour the egg white mixture into the prepared muffin tin. Use a spoon to divide the mixture evenly among the 12 muffin slots. Don’t overfill the cups—leave a little space at the top to allow the egg whites to rise slightly as they cook.
If you have any leftover mixture, you can bake it in a separate small dish or make a few more bites by adding extra veggies.
6. Bake the Egg White Bites
Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the egg whites are set and lightly golden on top. The bites should be firm to the touch, but soft and fluffy inside. If you want a slightly crispy top, leave them in the oven for an extra 2-3 minutes. However, be careful not to overbake them, as this can cause the bites to become dry.
To check if they’re done, insert a toothpick into the center of one of the bites. If it comes out clean, the bites are ready.
7. Cool and Remove from the Muffin Tin
Once the egg white bites are done, remove the muffin tin from the oven and allow them to cool for 5-10 minutes. This will make it easier to remove them from the tin and prevent them from falling apart.
After they’ve cooled slightly, use a small spoon or butter knife to gently loosen the edges of each bite. Carefully lift them out of the muffin tin and transfer them to a plate or serving platter.
8. Serve and Enjoy
Serve the High-Protein Egg White Bites warm or at room temperature. Garnish with fresh herbs like parsley, cilantro, or chives for added flavor and visual appeal. You can also drizzle them with a little hot sauce or salsa for an extra kick. These bites are perfect for breakfast, as a snack, or even as part of a balanced meal.
