Ingredients

  • 4 large flour tortillas
  • 1 1/2 cups shredded cheddar cheese (or any cheese of your choice)
  • 1 tablespoon olive oil or butter
  • 1/4 cup sliced black olives (for jack-o-lantern eyes and mouths)
  • Optional: diced bell peppers, cooked chicken, or other fillings

Instructions

  • Prepare the Tortillas:
    • Use a jack-o-lantern-shaped cookie cutter to cut out faces from the tortillas. If you don’t have a cookie cutter, you can freehand the design using a knife. Aim for fun shapes like eyes, noses, and mouths.
  • Assemble the Quesadillas:
    • Heat a large skillet over medium heat. Brush one side of a tortilla with olive oil or butter and place it, oiled side down, in the skillet.
    • Sprinkle 1/2 cup of shredded cheese evenly over the tortilla. Top with another tortilla (plain side down) and press lightly.
  • Cook the Quesadillas:
    • Cook until the bottom tortilla is golden brown and crispy, about 2-3 minutes. Flip carefully and cook the other side until golden and the cheese is melted, about 2 minutes more.
  • Add the Faces:
    • Remove the quesadilla from the skillet and let it cool slightly. Using the leftover tortilla cut-outs, place the black olive slices and other ingredients on top of the quesadilla to create the jack-o-lantern face.
  • Serve:
    • Cut the quesadilla into wedges and serve warm. Enjoy!
