  • 2 tablespoons salted butter
  • 1/4 to 1/2 cup finely chopped onion (to taste)
  • 1/2 cup tomato sauce
  • 1.5 pounds ground beef (85% lean)
  • 1 sleeve (4 ounces) saltines, crushed
  • 1.5 cups grated Cheddar cheese (about 6 ounces)
  • 1 teaspoon Worcestershire sauce
  • 1.5 teaspoons kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons ketchup

Instructions

  • Preheat the oven to 350°F (175°C).
  • Melt butter in a skillet over medium-low heat. Add onions and cook until translucent, about 5 minutes. Let cool.
  • In a large bowl, combine the beef, Worcestershire sauce, salt, pepper, crushed saltines, cheese, eggs, tomato sauce, and cooled onions. Mix gently with your hands.
  • Form the mixture into a loaf on a large baking tray.
  • Spread ketchup over the top of the loaf.
  • Bake for about 1 hour or until the internal temperature reaches 170°F (77°C).
  • Allow to cool for 10 minutes before slicing.

Notes

  • The consistency of the meatloaf can be adjusted by the amount of crushed saltines used.
  • Letting the meatloaf rest before slicing helps it retain its shape.
