For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 4 tablespoons unsalted butter (divided)
  • 4 cloves garlic (minced)
  • Juice and zest of 2 lemons
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  • Prep the Chicken: Season the chicken breasts with salt, pepper, and dried oregano on both sides.
  • Heat the Butter: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the chicken breasts and cook for 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  • Make the Garlic Butter Sauce: In the same skillet, add the remaining 2 tablespoons of butter. Add the minced garlic and sauté for about 1 minute until fragrant. Stir in the lemon juice and zest, scraping up any brown bits from the bottom of the pan.
  • Combine: Return the cooked chicken to the skillet, spooning the lemon garlic butter over the top. Cook for an additional 2-3 minutes to warm the chicken through.
  • Serve: Garnish with fresh parsley and serve hot with your choice of sides!
