Ingredients
For the Beef Nachos:
- 1 lb ground beef (or lean ground turkey)
- 1 bag of tortilla chips (about 10 oz)
- 1 packet taco seasoning (or homemade seasoning mix)
- 1/2 cup water (to make the taco seasoning)
- 2 cups shredded cheddar cheese
- 2 cups shredded mozzarella cheese (optional for a blend)
- 1/2 cup black beans (optional)
- 1/2 cup diced tomatoes
- 1/4 cup sliced jalapeños (optional)
- 1/4 cup red onion (diced, optional)
- 1/4 cup fresh cilantro (optional, for garnish)
- 1/2 cup sour cream (for serving)
- 1/2 cup guacamole (for serving)
- 1/4 cup salsa (for serving)

Instructions
1. Cook the Ground Beef
Start by browning the ground beef in a large skillet over medium-high heat. Use a spatula to break up the meat as it cooks. Cook until the beef is no longer pink and fully cooked through, about 7-10 minutes.
Once the beef is cooked, drain any excess fat from the skillet. This step helps ensure that the nachos don’t become too greasy. After draining the fat, return the skillet to the heat.
2. Season the Beef
Add the taco seasoning to the beef. You can use a store-bought packet of taco seasoning or make your own by combining chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper.
Pour in the 1/2 cup of water, then stir to combine the seasoning with the beef. Let the mixture simmer for about 5 minutes, or until the water has been absorbed and the beef is well-seasoned. The beef should have a rich, flavorful taste at this point.
3. Prepare the Nachos Base
While the beef is cooking, prepare the nacho base. Arrange a layer of tortilla chips in a large oven-safe dish or on a baking sheet. You can use any kind of tortilla chips you prefer, but thicker chips will hold up better under the toppings. Spread the chips out evenly to create a solid base for the beef and cheese.
4. Layer the Nachos
Once the beef is ready, it’s time to layer the nachos. Spoon the seasoned beef evenly over the chips, making sure every chip is topped with some of the flavorful beef.
After the beef, sprinkle a generous amount of shredded cheddar and mozzarella cheese over the top. The cheese should cover the beef and chips evenly, ensuring that every bite is cheesy and delicious.
5. Bake the Nachos

If you like your nachos extra crispy, you can leave them in for a couple of extra minutes or even broil them for 1-2 minutes at the end to get a golden, crispy finish.
6. Add Fresh Toppings
Once the nachos are out of the oven, it’s time to add the fresh toppings. Sprinkle diced tomatoes, sliced jalapeños, and red onions on top of the melted cheese. You can also add black beans at this point if you like.
