  • 1/2 cup black beans, drained and rinsed (optional)
  • 1/2 cup corn kernels (fresh, frozen, or canned)
  • 1/2 cup diced tomatoes
  • 1/2 cup sliced red onions
  • 1/4 cup sliced jalapeños (optional, for heat)
  • 1/4 cup fresh cilantro, chopped

Instructions

1. Cook the Chicken

Start by preparing the chicken. If you’re using boneless, skinless chicken breasts or thighs, cut them into small, bite-sized cubes for easier cooking and even distribution on the nachos.

In a medium skillet, heat the olive oil over medium-high heat. Once the oil is hot, add the chicken cubes and cook for about 6-8 minutes, stirring occasionally, until the chicken is browned and fully cooked through.

Sprinkle the taco seasoning over the chicken and add a tablespoon of lime juice. Stir well to coat the chicken evenly with the seasoning. Let the chicken cook for an additional 2-3 minutes to allow the seasoning to combine with the chicken and form a flavorful coating. Once done, remove from heat and set the chicken aside.

2. Preheat the Oven

While the chicken is cooking, preheat your oven to 375°F (190°C). This temperature is perfect for melting the cheese and crisping up the tortilla chips without burning them.

3. Prepare the Nacho Base

On a large baking sheet or oven-safe dish, spread out the tortilla chips in an even layer. You want to make sure the chips are spread evenly so that every bite of nachos has a bit of everything.

If you’re using homemade tortilla chips, this is the time to prepare them by cutting corn tortillas into triangles, brushing them lightly with oil, and baking them at 350°F (175°C) for about 10-12 minutes until crispy.

4. Layer the Nachos

Once the tortilla chips are in place, start layering the ingredients. Begin by evenly distributing the cooked chicken over the chips. Then, sprinkle the black beans and corn evenly over the chicken, followed by the diced tomatoes, red onions, and sliced jalapeños (if using).

5. Bake the Nachos

Place the loaded nachos into the preheated oven and bake for about 10-12 minutes, or until the cheese is fully melted and bubbly, and the edges of the chips are slightly golden and crispy.

Keep an eye on them towards the end of baking to make sure the chips don’t burn, and the cheese doesn’t overcook. If you want your nachos to have extra crispy edges, leave them in the oven for an additional 1-2 minutes.
